Preheat oven to 350°. Combine raspberry jam and walnuts in a small bowl

- 3/4 c. fat-free sour cream

- 1/4 c. sifted powdered sugar
- 1 1/2 tsp. 2% reduced-fat milk
Pumpkin Cookies

Preheat oven to 350 degrees
- COOKIES
- 2 cups butter, softened
- 2 cups granulated sugar
- 2 tsp baking powder
- 2 tsp baking soda
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 2 eggs
- 2 tsp vanilla
- 1 15-oz can pumpkin
- 4 cups all-purpose flour
- FROSTING
- 1/2 cup butter
- 1/2 cup packed brown sugar
- 1/4 cup milk
- 1 tsp vanilla
- 2 3/4 cups powdered sugar

Lighter Lasagna

- LASAGNA
- 2 cups cubed zucchini
- 1 cup cubed red bell peppers
- 1 cup chopped tomatoes
- 4 cups (12 oz.) sliced mushrooms
- 1/3 cup dry red wine
- 10 oz. fresh spinach, rinsed
- 2 cups low-fat cottage cheese
- 1 cup grated low-fat mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 pound uncooked lasagna noodles
- SAUCE
- 1 tsp. dried oregano
- 1 tsp. dried basil
- 1/3 cup red wine
- 3 cups undrained (28-oz.) canned tomatoes
Stuffed Zucchini

Preheat oven to 350. Cut off knobby ends and cook whole zucchini in boiling water for 10 minutes
- 1 zucchini, washed
- 1 garlic clove, minced (or from a jar)
- 2 tsp. grated Parmesan cheese
- 4 tb. Italian style breadcrumbs
Hazelnut Biscotti Dipped in Chocolate

In large mixing bowl, beat butter with electric mixer on medium speed for 30 seconds
- 1/3 cup butter
- 2 cups all-purpose flour
- 2/3 cup sugar
- 2 eggs
- 2 tsp. baking powder
- 1 tsp. vanilla
- 1 1/2 cups hazelnuts, finely chopped
- 1 cup semi-sweet chocolate chips
- 1 tb. shortening
Strawberries and Cream Cookies

Preheat over to 325. Stack two baking sheets together and line top sheet with parchment paper
- 3/4 cup sugar
- 1 cup unsalted butter, softened
- 2 cups all-purpose flour
- 1 tsp. vanilla extract
- 1 tb. whipping cream
- 1/2 cup minced white chocolate
- 3/4 cup dried strawberries*, coarsely minced
