Smoky Corn & Black Bean Pizza

1. Preheat grill to medium (or oven to 450 degrees) 2
- 1 plum tomato, diced
- 1 cup canned black beans, rinsed
- 1 cup corn kernels (about 2 ears)
- 2 Tbsp cornmeal
- 1 pound prepared whole wheat pizza dough
- 1/3 cup barbecue sauce
- 1 cup smoked mozzarella cheese (or smoked gouda)
Mushroom, Tomato, and Barley Soup

1. In a large saucepan, heat oil over medium-high heat
- 1 tablespoon olive oil
- 1 (8-ounce) container diced yellow onion*
- 1/2 cup finely chopped carrot
- 1 (8-ounce) package sliced baby bella mushrooms
- 2 teaspoons bottled minced garlic
- 4 cups vegetable stock*
- 1 cup water
- 1 cup uncooked quick-cooking barley
- 1 (14.5-ounce) can diced tomatoes, drained
- 1 teaspoon salt
Chocolate Chip Gooey Butter Cookies

Directions: Preheat oven to 350 degrees
- 1 Box Butter Cake Mix
- 8 ounces cream cheese (Softened)
- 1/2 cup butter (Softened)
- 1 egg
- 1 tsp vanilla
- 1 cup milk chocolate chips
Brownie Batter Dip

In a large bowl, beat cream cheese and butter until smooth
- 1 package (8 ounces) cream cheese, softened
- 1/4 cup butter, softened
- 2 cups confectioners' sugar
- 1/3 cup baking cocoa
- 1/4 cup 2% milk
- 2 tablespoons brown sugar
- 1 teaspoon vanilla extract
- 1/4 cup M&M's minis, optional
- Animal crackers, pretzels and/or sliced apples
Tis the Season Coconut Macaroons

Preheat oven to 350F. Foil-line and grease baking sheets
- 1 pkg (14 oz) flaked coconut, or 5 1/3 cups
- 1 can (14 oz) sweetened condensed milk
- 2 tsp vanilla
- 1 cup (6 oz) Nestle Swirled holiday morsels
Tomato, Broccoli & Mozzarella Pasta Casserole

Heat the oven to 375°F and lightly grease a 9x13-inch casserole dish with olive oil
- 12 ounces farfalle pasta (also known as bowtie)
- 1 pound broccoli florets, frozen or fresh
- 3 large ripe tomatoes, divided
- 3/4 pound onion, diced
- 4 garlic cloves, very finely minced
- One 15-ounce can chickpeas, drained
- 3/4 cup chopped basil leaves, divided
- 1/2 pound fresh full-fat mozzarella, divided
- 3 large eggs
- 1 cup cottage cheese (4% milkfat or greater)
- 1 lemon, juiced
- 3/4 cup grated Parmesan, divided
- 2 teaspoons salt
- 1 teaspoon black pepper
Norwegian Sour Cream Cookies

Mix together your wet ingredients (butter, sugar, egg, sour cream and vanilla) until smooth
- 1/3 cup butter (softened)
- 2/3 cup sugar
- 1 beaten egg
- 1/3 cup SOUR cream*
- 1 tsp vanilla
- 1 2/3 cups sifted flour
- 1 tsp. baking powder
- 1/8 tsp. baking soda
- 1/4 tsp. salt
- Cinnamon Sugar: Combine a few tablespoons of sugar and about 1-2 tsp. ground cinnamon
- * NOT commercial sour cream but cream or heavy cream that has gone sour or bad.
Broccoli Slaw

Mix broccoli slaw and green onions - add almonds, noodles, and dressing* when ready to serve
- Slaw:
- 1 16 oz pkg broccoli slaw
- 3 green onions (sliced)
- 1 cup slivered almonds (or salted peanuts or other nut)
- 1-2 pkgs crushed ramen noodles (oriental flavor)
- Dressing:
- 1/4 to 3/4 cup oil (I use olive oil)
- 1/4 cup white vinegar (or cider vinegar)
- 1-2 seasoning packets from ramen noodles
- 1/4 to 1/2 cup sugar
Potato-Cheddar Soup

- 1 28 ounce package frozen diced hash brown potatoes with onions and peppers
- 1 cup chopped miniature sweet peppers
- 3 cups fat-free half-and-half
- 1/2 teaspoon salt
- 1/2 teaspoon curry powder
- 1/8 - 1/4 teaspoon cayenne pepper
- 1 cup water
- 6 ounces cheddar cheese, shredded (1-1/2 cups)
- Sliced miniature sweet peppers (optional)
- Snipped fresh Italian (flat-leaf) parsley (optional)
Mushroom Smoked Gouda soup

In a large saucepan, melt butter
- 1/2 cup butter
- 1/2 cup all- purpose flour
- 1/2 tsp. pepper
- 1/2 tsp. nutmeg
- 1 carton (32 oz.) chicken stock (No-Chicken Broth)
- 1/2 cup cooking sherry or more chicken stock
- 1/2 cup heavy whipping cream
- 1/2 pound sliced mushrooms ( I used baby portabellas)
- 2 garlic cloves, minced
- 2 cups shredded Smoked Gouda cheese
