Black Bean Chicken with Rice Recipe

Combine the chili powder, cumin, pepper and salt; rub over chicken
- 3 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon pepper
- 1/4 teaspoon salt
- 4 boneless skinless chicken breast halves (4 ounces each)
- 2 teaspoons canola oil
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup frozen corn
- 1 cup salsa
- 2 cups cooked brown rice
Skinny Shrimp Scampi with Zucchini Noodles

First tried 9/13/2015. Easy and very good
- 2 T. olive oil
- 1 pound jumbo shrimp, peeled and deveined
- 1 T. minced garlic
- 1/4 tsp. crushed red pepper flakes (optional)
- 1/4 cup white wine
- 2 T. freshly squeezed lemon juice
- 2 medium zucchini, cut into noodles (try using more)
- Chopped parsley for garnish
Ham Casserole

In 2 T. butter saute onion and pepper
- 2 T. butter
- 1 small onion, chopped
- 1/2 green pepper, chopped
- 8 ounces wide noodles
- 2 cups cooked ham
- 2 + cups Guyere cheese and Monterey jack cheese (I use more Guyere)
- 1 can cream mushroom soup
- 1 cup sour cream
- 3 T bread crumbs mixed with 1tsp. olive oil or melted butter for topping
Broccoli with Caramelized Onions & Pine Nuts

Excellent side dish, first made 7-14-2010
- 3 T. pine nuts or chopped slivered almonds
- 2 tsp. extra-virgin olive oil
- 1 cup chopped onion (about 1/2 large)
- 1/4 tsp, salt or to taste
- 4 cups broccoli florets
- 2 tsp. balsamic vinegar
- Freshly ground pepper to taste
Peanut Butter Brownie Bars Recipe

Prepare brownie batter according to package directions
- 1 package fudge brownie mix (13-inch x 9-inch pan size)
- 12 peanut butter cups, chopped
- 1/2 cup salted peanuts, chopped
- 2 cups (12 ounces) semisweet chocolate chips
- 1-1/4 cups creamy peanut butter
- 1 tablespoon butter
- 1-1/2 cups crisp rice cereal
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
Warm Broccoli 'N Cheddar Dip

In 1-quart casserole dish, combine vegetable recipe soup mix, sour cream, broccoli and 3/4 cup cheese until smooth
- 1 envelope Lipton Vegetable Recipe Soup Mix
- 1 container (16 ounce) sour cream
- 1 pkg. (10 ounce) frozen chopped broccoli or spinach, thawed and squeezed dry
- 1 cup shredded Cheddar cheese (about 4 ounces)
Bruschetta Chicken Recipe

Place flour and eggs in separate shallow bowls
- 1/2 cup all-purpose flour
- 1/2 cup egg substitute
- 4 boneless skinless chicken breast halves (4 ounces each)
- 1/4 cup grated Parmesan cheese
- 1/4 cup dry bread crumbs
- 1 tablespoon butter, melted
- 2 large tomatoes, seeded and chopped
- 3 tablespoons minced fresh basil
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Blueberry Muffins

- 1 large egg, lightly beaten
- 1 cup (240 ml) plain yogurt (full fat or low fat)
- 1/3 cup (80 ml) vegetable, canola, safflower, or corn oil
- 1 teaspoon pure vanilla extract
- 2 cups (260 grams) all-purpose flour
- 1/2 cup (100 grams) granulated white sugar
- 1 1/4 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 - 1 1/2 cups (240-360 ml) fresh or frozen blueberries (If using frozen blueberries, do not thaw before adding them to the batter.)
Steak 'N’ Bacon Cheddar Meatballs
