"I made this dip recently for a 'Girls’ Night In
- 2 11-ounce cans Mexican corn, drained
- 2 41/2 -ounce cans chopped green chiles, drained
- 2 cups grated Monterey Jack cheese (about 8 ounces)
- 3/4 cup grated Parmesan cheese
- 1 cup mayonnaise
- Corn chips, for dipping
Simmered Pinto Beans

Heat a saucepan over medium-high heat
- 2 teaspoons olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped red bell pepper
- 1/2 teaspoon ground cumin
- 2 garlic cloves, minced
- 1/2 cup unsalted chicken stock
- 1/8 teaspoon kosher salt
- 1/8 teaspoon freshly ground black pepper
- 1 (15-ounce) can unsalted pinto beans, rinsed and drained
- 1 tablespoon lemon juice
- 2 tablespoons chopped fresh cilantro

Cilantro Jalapeño Pasta with Blackened Chicken

1. For the chicken: In a small prep bowl combine the seasonings for the chicken
- For the Chicken:
- 1 large boneless chicken breast (total weight 1 to 1 1/2 pounds)
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon chile ancho powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Mexican oregano, crushed
- Olive oil
- You Will Also Need:
- 12 ounces cooked pasta, reserved (I used a bowtie pasta)
- 1/2 cup pasta water, reserved
- 1/3 cup onion, diced
- 2 cloves garlic, minced
- 1 poblano pepper, diced
- 1 jalapeño pepper, sliced thin for garnish
- Lime, sliced thin for garnish
- For the Cilantro Jalapeño Sauce:
- 1 full cup cilantro, previously washed
- 2 jalapeños, seeds removed and chopped (*or use only 1 for less spice)
- Juice of 1 large lime
- 3/4 cup chicken broth
- 1/2 cup white cooking wine, optional (*if not using wine, just add more broth)
- 1 1/2 teaspoons of cornstarch
- 1 1/2 teaspoons chicken bouillon granules
- 1/3 cup olive oil, plus more for cooking vegetables
- Salt and fresh cracked pepper, to taste
Red Lentils

Put the lentils in a strainer and rinse them under running water
- Lentils (Dal):
- 1 cup masoor dal red lentils, picked through for stones
- 2 cups water
- 1 onion, diced
- 4 cloves garlic, thinly sliced
- 1 (1/2-inch) piece ginger, peeled and minced
- 2 medium tomatoes, diced
- 1 serrano chile, sliced in 1/2, optional
- Tempering oil (bagaar):
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon black mustard seeds
- Generous 1/2 teaspoon turmeric powder
- 1/2 teaspoon paprika or bafaat powder
- 1 tablespoon vegetable oil
- Handful chopped fresh cilantro leaves

- 6 whole Boneless, Skinless, Trimmed Chicken Breasts
- Salt And Pepper, to taste

- 12 ounces, weight White Mushrooms, Sliced Thin
- 1 cup Dry White Wine
- Chicken Broth (optional)
- 1 whole Lemon
- ½ cups Heavy Cream (can Use Half-and-Half)

- Chopped Fresh Italian Parsley

Fiesta Rice Stuffed Peppers

Preheat grill or grill pan to medium high heat
- 4 medium red bell peppers (cut in 1/2, lengthwise, seeds removed)
- 2 cups cooked white rice
- 2 cups rotisserie chicken (shredded)
- 11/2 cups fresh corn kernels
- 3 scallions (sliced)
- 2 sprigs fresh oregano (chopped)
- 1 teaspoon cumin
- 1 teaspoon cayenne pepper
- 1 lime (zested and juiced)
- 1/2 cup Greek yogurt
- 1/2 cup shredded Monterey cheese or queso fresco (crumbled)

- 1 cup crushed tortilla chips
- 1/2 bunch cilantro (chopped)
- 1/2 cup medium vine ripe tomato (chopped)
- 2 scalions (sliced)

Buffalo Chicken Nachos

Directions Preheat the oven to 350 degrees F
- 1 tablespoon vegetable oil
- 4 tablespoons unsalted butter
- 1 jalapeno, minced
- 1 tablespoon minced garlic
- 1 1/2 cups hot sauce, such as Frank's RedHot
- 1 cup low-sodium chicken broth
- 1 tablespoon fresh lime juice
- 1 tablespoon white vinegar
- Kosher salt and freshly ground black pepper
- 2 teaspoons smoked paprika
- 1 teaspoon cayenne
- 1 teaspoon celery salt
- 1 teaspoon kosher salt

- Three 5-ounce boneless, skinless chicken breasts, sliced lengthwise into 3 strips
- Canola oil, for deep-frying
- 8 pitas, each cut into 8 wedges

Crockpot Indian Curry

Assemble all of your spices, coconut milk, tobasco sauce, and tomato paste
- 1 13.5 oz can of coconut milk (don't use the light, it doesn't taste as good. or use the light and then stir in heavy cream at the end. Your tongue wants the thick stuff... trust me.)
- 1 can garbanzo beans, drained and rinsed
- 4-6 frozen skinless, boneless chicken thighs
- 1 T tomato paste
- 2 T curry powder (not a typo, it's a lot, but it's good. Curry isn't spicy, just flavorful)
- 1 t ground coriander
- 1 t ground cumin
- 1 inch peeled and grated ginger (I didn't use that much, I don't particularly care for ginger)
- few dashes of hot sauce (I used Tobasco)
- 1 yellow onion. chopped
- 2 or 3 cloves of smashed and chopped garlic
- 1 green bell pepper, seeded and chopped
- 1/2 of an eggplant, chopped (I didn't peel)
- 1 sweet potato, peeled and chopped (I hate peeling sweet potato, so used a knife and lost a lot of the flesh accidentally)
