DSEERT- Easy Peasy Mango Pudding

1. Prepare the jelly as per packet instructions
- 1 pack Aeroplane jelly in mango
- 1 small tin of condensed milk (around 180g)
- 1 ripe mango
- 450 ml hot water
DIP - Caramelised Onion

Peel and finely slice onions
- Makes about 2/3 cup of caramelised onion.
- We use a 20ml tablespoon and 250ml measuring cup for all of our recipes.
- 2 medium-large onions (about 300g onion, before peeling)
- 1 tablespoon oil
- 2 teaspoons balsamic vinegar
- Salt, to taste
COOKIES - Cinnamon Macaroon

Macaroon: Preheat the oven to 200°F (93°C)
- Macaroon:
- 2 1/4 cups (225 g, 8 oz.) icing sugar
- 2 cups (190 g, 6.7 oz.) almond flour
- 2 tablespoons (25 g , .88 oz.) granulated sugar
- 1 tsp ground cinnamon
- 5 egg whites (Have at room temperature)
- Cream Cheese Filling:
- Makes enough to fill the macarons
- 6 oz cream cheese, softened
- 4 oz unsalted butter, softened
- 1 1/2 cups powdered sugar, sifted
- 2 tbsp lemon juice
- 1/2 tsp vanilla extract
BREADFAST - Waffle Easy Belgium Waffle

Beat butter and Crisco together until soft, beat in the sugar and salt until light and puffy
- 50 g Unsalted butter
- 70 g Crisco (white vegetable shortening)
- 2 Eggs
- 120 g Golden caster sugar
- 1/2 tsp Vanilla extract
- A pinch of salt
- 2 tsp Crème Fraîche (or milk)
- 160 g Bread flour
- 2 tbsp Pearl sugar
SNACKS - Sweet Potato Balls 番薯担

Boil the sweet potato in boiling water until it's soft
- Filling suggestion:
- 1 sweet potato (both the orange or yellow fleshed variety can be used. In fact, I had mixed both together)
- approx. 1 cup glutinous rice flour
- white sesame seeds
- red bean paste, or roasted crushed peanuts tossed with sugar, or lotus paste or yam paste or black sesame paste etc.
BREAKFAST - Bacon Corn Hash

Note: I used 3 small ears corn, which yielded 2 cups but wanted more corn
- 1/2 pound thick-cut bacon, cut into small dice
- 1 pound red potatoes, scrubbed clean and diced into 1/4- to 1/2-inch cubes (about 3 to 3 1/4 cups)
- Salt and freshly ground black pepper
- 4 medium-large ears corn, kernels cut from the cob (2 1/2 to 3 cups)
- 1 bundle scallions, thinly sliced

- Sponge:
- 1/8 teaspoon dried yeast
- pinch of sugar
- 125 g all purpose flour
- Dough:
- 1/2 tablespoon olive oil
- 1/2 large onion, finely diced
- 1 1/4 teaspoons dried yeast
- pinch of sugar
- 2 cups + 2 tablespoons (300g) all purpose flour
- 1/4 teaspoon table salt
- freshly ground black pepper, to taste
- 30 g unsalted butter, softened
- 70 g salami, finely chopped
- 2 tablespoons fresh oregano leaves, coarsely chopped

Mix yeast, brown sugar, dash of salt and 1 1/2 cups water
- 1 1/2 tsp Yeast
- 1/2 tsp Brown sugar
- 1 tsp Salt
- 1 1/2 c Water
- 4 c Bread flour
- 2 tsp Baking soda
- 2 c Warm water
- 1/2 lb Butter
- 2 Tbsp Honey
- White sugar Brown sugar.
PASTE - Sambal Belacan Paste

- Spices:
- Belacan(shrimp paste) - 槟城福发行 Belancan
- Red Chilli (wash and dry before cut)
- Galangal (Sliced)
- Ginger (Sliced)
- Fresh Turmeric (Sliced)
- Garlic
- Shallot
- Candle nuts (Soaked and wash)
- Lemongrass (wash and sliced)
- Oil
- Sugar

SQUID 0- Salt and Pepper Squid 台灣椒鹽魷魚(中卷)

chop the squid as described above get ready the other ingredients – the spices can be put into one bowl
- 2 medium squid, chopped into pieces 2.5cm (or 1 inch) square approximately
- 1 red chili, 1 green chili (as hot as you want!) chopped finely
- half a green pepper, chopped finely but a little bigger than the other spices
- half an onion chopped finely
- 2 cloves of garlic, chopped finely
- a small piece of ginger chopped finely
- 1 tsp of salt and 2 tsp of coarse black pepper
- coating – flour,egg and potato flour
