- 1 cup grated Cheddar cheese - (abt 4 oz)

- Freshly-ground black pepper -- to taste

- 1 vanilla bean, halved lengthwise, seeds scraped and reserved

- 3 large whole eggs plus 3 egg yolks, room temperature
