Mom's Marinade

Mix all ingredient well. Great on chicken, fish or meat
- 2/3 C oil
- 2/3 C teriyaki
- 4 tbsp minced garlic, (more or less to taste)
- 2 tsp white horseradish (not the spread kind, actual horseradish)
- 2 tsp grey poupon
- 1 tsp honey
Stuffed Mushrooms

Veggie stuffed mushrooms. 29 calories each, 1
- 22 medium baby bella mushrooms (2 packages fresh)
- 1/4 C minced yellow onion
- 2 C fresh baby spinahc (wilted, then minced)
- 1/8 C minced sweet pepper
- 2 tsp minced garlic
- 1/2 C italian bread crumbs
- 3/4 C grated parmesan or romano cheese
- Onion powder, onion salt and garlic salt to taste
Grilled Portobello Mushrooms with Tomatoes and Fresh Mozzarella

1. Prepare the barbecue (medium-high heat)
- 2 tbsp olive oil, plus extra for greasing grill pan
- 1/2 tbsp balsamic vinegar
- 4 large portobello mushrooms (about 5 inches in diameter), stemmed
- Salt and freshly ground black pepper
- 3 cloves garlic, minced
- 3 small to medium sized vine ripened tomatoes, cut into 1/2-inch pieces*
- or 1 large tomato
- 8 ounces fresh mozzarella, cut into 1/2-inch cubes
- 1/4 cup chopped fresh basil leaves
Creole-Cajun Jambalaya

1. Saute sausage, chicken, onions, bell pepper and garlic until sausage and chicken are browned
- 2 lb beed sausage cut 1/4 inch thick
- 1 lb boneless chicken diced
- 1 large onion
- 1 bell pepper
- 4 garlic cloves
- 5 C water
- 2 1/2 tbsp groumet cajun spice
- 1 tsp salt
- 3 bay leaves
- 6 oz tomato paste
- 1 lb peeled shrimp
- 3 C raw rice
Green and Yellow Beans with Mushrooms

1. Bring a large pot of water to a boil
- 1 lb green beans
- 1 lb yellow wax beans
- 8 oz mushrooms (baby bella, oyster, chanterelle, etc)
- 3 tbsp. evoo
- 2 cloves garlic
- salt
- pepper
- dry white wine

1. put cereal into large mixing bowl 2
- 1 box Krispix cereal
- 1 stickof butter
- 1 6oz packagechocolate chips
- 1 C peanutbutter
- powdered sugar
Thai Red Chicken Curry (Gaeng Khiao Wan Gai)

1. Heat 1T oil in the sauce pot over medium high heat until hot
- 1 chicken breast, diced into bite size
- 2 T oil, divided
- 2 garlic chopped
- 1 shallot chopped
- 1 lemongrass, end parts removed and smashed to release fragrance
- 2 T red curry paste mixed in 2t water
- 3 T chicken stock
- 1 " ginger piece, peeled and sliced
- 1 tomato sliced into wedges
- 200 g (7oz) coconut milk mixed in 1/2C water
- 1 Asian eggplant, sliced into desired size
- 1 large carrot, sliced
- 1 t brown sugar
- 1 t fish sauce
- Some chopped cilantro to garnish
Latkes

1. grate the potatoes and put in a colander - let stand for several minutes and then drain off all the excess water
- 5 medium potatoes (grated)
- one finely grate onion
- 2 eggs well beaten
- 1/2 - 3/4 cup matzo meal
- 1/2 t baking powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
Whole Roast with Herb Crust

1. Preheat the oven to 450
- 1 (8 - 10 lb) whole beef top loin roast or a 4 - 6 lb fat-trimmed piece
- 2 tbsp. minced garlic
- 2 tbsp. chopped fresh thyme or 2 tsp dried
- 1 tbsp. chopped fresh rosemary or 1 tsp dried
- 2 - 3 tbsp salt
- 1 - 2 tsp pepper, to taste
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar for brushing (or more)
