Butternut Squash Black Bean Chili

By chbounds
1. Heat the oil a large pot over medium heat and add the onion and a pinch of salt and pepper
- Optional:
- 1 T. olive oil
- 1 medium onion, dice, about 1 1/2 cups
- 2 garlic cloves minced
- 1 carrot chopped
- 2 cups butternut squash cubed
- 1 poblano pepper, stemmed and seeds removed, and diced
- 1 tsp. chili powder
- 1/2 tsp. chipotle paste or powder
- 1 cup halved cherry tomatoes or 1 cup canned diced tomatoes
- 2 tsp. apple cider vinegar
- 1 cup cooked black beans, drained and rinsed
- 1 can corn
- 2 to 3 cups vegetable broth
- juice of 1/2 to 1 lime
- Sea salt and freshly ground pepper
- Add shredded roasted chicken to chili
- Cilantro
- Baked tortilla chips
- Lime slices
- Dollops of sour cream
Vegetarian Chili

- cup each, chopped:
- 2 1/2 c. raw kidney beans
- 1 c. raw bulghar
- 1 c. tomato juice
- 4 cloves garlic
- 1 1/2 c. chopped onion
- celery
- carrots
- green peppers
- 2 c. chopped, fresh tomatoes
- juice of 1/2 lemon
- 1 tsp. ground cumin
- 1 tsp. basil
- 1 tsp. chili powder (more, to taste)
- salt and pepper
- 3 T. tomato paste
- 3 T. dry red wine
- dash of cayenne (more, to taste)
- olive oil for saute (about 3 T.)
- Optional: 1 cake tofu, frozen then thawed
Apple Hill Apple Cake

- Mix:
- 2 c. sugar
- 1/2 c. vegetable oil
- 2 eggs
- 4 c. sliced or diced apples
- Mix:
- 2 c. flour
- 1 tsp. salt
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- 2 tsp. baking soda

- 4 oz. butter
- 3 eggs
- 1 c. flour
- 1 c. milk
- 1 tsp. salt
- 1 tsp. baking powder
- 1 lb. grated Jack cheese
- 4 c. chopped fresh spinach
Herbed Pork with Sauteed Wild Mushrooms

Heat butter in a large nonstick skillet over medium-high heat
- 2 T. butter
- 2 cups sliced shiitake mushroom caps (or regular mushrooms)
- 1 1/2 tsp. steak seasoning (such as McCormick Grill Mates)
- 1 tsp. dried thyme
- 4 (4-oz) boneless center-cut loin pork chops (about 3/4 in. thick)
- 1 c. chicken broth
- 2 tsp. cornstarch
Pumpkin Chicken Chili

Serves 8-10
- 2 T. Canola Oil
- 1 large Vidalia onion chopped (1 1/2 cups)
- 1 large red onion, chopped (1 1/2 cup)
- 2 poblano chili peppers, diced (3/4 c.)
- 1 medium orange bell pepper, diced (1 cup)
- 16 ounces ground white chicken meat or turkey meat
- 4 cooked chicken breasts (optional)
- 1 c. pumpkin puree
- 28 ounces canned diced tomatoes
- 1 T. tomato paste
- 4 c. low-sodium chicken broth
- 1 bay leaf
- 1 15-oz. can white beans
- 1 15-oz. can garbanzo beans
- 2 cloves garlic, minced (2 tsp.)
- 1 T. cumin
- 1 T chili powder
- 2 tsp. freshly ground black pepper
- 1 tsp. sweet smoked paprika
- Dash cinnamon
- Dash allspice
- Fresh cilantro for garnish
- Scallions cut crosswise into thin slices for garnish
- Avocado diced for garnish

- 3 eggs
- 1 cup flour
- 1 cup milk
- 1 tsp. salt
- 1 tsp. baking powder
- 1 lb. Jack cheese grated
- 4 c. chopped fresh spinach (8-10 oz. bag)
Brussels Sprouts with Pecans and Avocado

Preheat oven to 400. Spread the pecans in a pie plate and bake for 5 minutes
- 1/2 c. pecans
- 2 1/2 lbs. Brussels sprouts
- 1/4 c. olive oil
- salt
- freshly ground pepper
- 1 avocado cubed into 1/2 inch pieces
- 1 tsp. thyme
- 2 T. balsamic vinegar

Pizza Sauce

- 1 (14 1/2 oz.) can diced tomatoes with juice
- 1 (6 oz.) can tomato paste
- 2 T. extra virgin olive oil
- 2 T. chopped fresh basil
- 1 1/2 tsp. dried oregano
- 1 1/2 tsp. sugar
- 1/2 - 1 tsp. minced garlic
- 3/4 tsp. salt (or 1 1/2 tsp. kosher salt)
