Risotto with Spring Greens

A deliciously light spring risotto
- 8 cups unsalted chicken stock, preferably homemade(I made vegetable stock from a base-see photo)
- 3 Tbsp. olive oil
- 1 shallot, chopped
- 2 cups Italian Arborio or carnaroli rice
- 2 cups chopped fresh spring greens, such as spinach, chard, turnip greens, or arugula
- 4 ounces prosciutto, diced into 1/4-inch pieces (I omitted)
- 1 Tbsp. butter
- 1/2 tsp. sea salt
- Freshly ground pepper
- Pecorino Romano or Parmesan cheese, grated
Braised Chicken Thighs - Death Row Meal

Potato Crusted Halibut

- 1 1/2 cups extra-virgin olive oil
- 6 garlic cloves, smashed
- 1 thyme bundle
- 2 bay leaves
- 1 lemon, zest removed from the lemon with a vegetable peeler in wide strips
- Pinch crushed red pepper flakes
- 1 tablespoon fennel seeds
- 3 Yukon gold potatoes, scrubbed
- 4 (6-ounce) Pacific halibut fillets

Rich, luxurious seafood stew
- 3 tablespoons olive oil
- 1 3/4 cups chopped onion
- 1 large chopped green bell pepper
- 1/2 teaspoon crushed red pepper
- 2 teaspoons fennel seed, crushed
- 8 to 10 cloves garlic, chopped (about 3 tablespoons), divided
- 3 tablespoons tomato paste
- 1 (750 milliliter) bottle fruity red wine
- 2 (28-ounce) cans crushed tomatoes
- 2 teaspoons salt, plus more for seasoning
- 1 bay leaf
- 3/4 teaspoon crumbled dried oregano
- 1 teaspoon freshly ground black pepper
- 2 pounds firm, meaty fish such as shark, yellowtail, monkfish or sea bass, diced into large chunks
- 1 pound delicate, flaky fish, such as rock cod or snapper, diced into large chunks
- (we used Tilapia we had on hand for the fish)
- 3/4 pound shrimp, in shell
- 1 (1 1/4- to 1 1/2-pound) Dungeness crab, cooked, cleaned and cracked
- (we omitted the crab)
- 1 pound small clams and/or mussels (we used both)
- 1 pound calamari (our addition)

- 2 tablespoons minced fresh oregano leaves
- 1 tablespoon minced garlic
- 2 teaspoons ground cumin
- 1 tablespoon salt (kosher)

- 1/4 cup fresh lemon juice
- 1/2 cup sour orange juice (I used fresh squeezed clementine juice)

Penne with Shrimp and Herbed Cream Sauce

Shrimp in a creamy, tomato herb sauce
- 1 pound penne pasta
- 1/4 cup olive oil
- 1 pound medium shrimp, peeled, and deveined
- 4 cloves garlic, minced
- 1/2 teaspoon kosher salt, plus extra for seasoning
- 1/2 teaspoon freshly ground black pepper, plus extra for seasoning
- 1 (15-ounce) can whole tomatoes, drained, roughly chopped
- 1/2 cup chopped fresh basil leaves
- 1/2 cup chopped fresh flat-leaf parsley
- 1/4 teaspoon crushed red pepper flakes
- 1 cup white wine
- 1/3 cup clam juice (I do not recommend substituting)
- 3/4 cup heavy whipping cream
- 1/2 cup grated Parmesan
- 1/4 cup thinly sliced pepperoni (my addition)

- 2 tablespoons extra virgin olive oil
- 1/2 pound ground mild italian sausage
- 2 cups marinara sauce Mine, I mean Giada's (I make in batches), your favorite recipe, or jarred
- 1/2 cup red wine, (Riojo is one I use often for cooking)
- 1/4 cup heavy cream
- 1 pound cheese tortellini, or choose your own pasta
- 2 inch sprig chopped fresh oregano
- 4 fresh basil leaves, sliced into thin ribbons, i.e., chiffonade
- 1/2 cup grated parmesan cheese
