Halloween Jack-O-Lantern Queso

Delicious, warm queso gets a festive pumpkin-themed twist with the addition of a blue corn chip jack-o-lantern face
- 1 (16-ounce) box of Velveeta cheese, cubed
- 1 (10-ounce) can of Rotel or other diced tomatoes with chilies
- 1/2 tablespoon Cholula or your favorite hot sauce
- 2 teaspoons paprika
- 1 clove minced garlic or 2 teaspoons garlic powder
- blue corn chips to garnish and serve
- green onions to garnish
Fried Egg + Avocado Morning Power Bowl

This egg-and-vegetable power bowl is one of my quick & healthy go-tos in the morning
- 1/2 tablespoon oil (coconut or olive)
- 1 clove garlic, minced
- 1/2 cup cherry tomatoes, halved
- 1 egg
- 1 cup (or more!) of your favorite power greens – baby kale, spinach, chard, arugula, etc.
- 1/4 avocado, sliced
- salt, pepper, red chili flakes
Bacon, Spinach, Swiss, & Caramelized Onion Dip

The best snacking kind of flavors combined into one
- 1 (8-ounce) package cream cheese
- 1 (8-ounce) package Neufchâtel cheese
- 1 cup light mayonnaise
- 1/2 cup light sour cream
- 1 packet onion soup mix
- 8 slices good quality bacon
- 1 large sweet yellow onion, thinly sliced
- 3 cups spinach, frozen chopped
- 1 1/2 cup swiss cheese, shredded (you could also use white cheddar or really any of your favorite shredded cheese)
- 1 tablespoon red pepper flakes
- Generous squeeze of lemon juice
- Fresh cracked black pepper
