Minestrone (30 minutes)

Start by dicing up your squash, then pour the olive oil into a large pot
- 3 tbsp olive oil
- 2 medium zucchini (Italian squash), diced
- 3 medium yellow squash, diced
- 1/2 tsp crushed garlic (optional)
- 2 cups frozen corn
- 1 can tomato sauce (15 oz.)
- 5 cups lower sodium chicken broth
- 1 tsp finely chopped or dried basil
- 1 tsp thyme
- 1 can white northern beans (15 oz.)
- 1/2 tsp garlic salt or celery salt
Apricot, Sage and Hazelnut Galette

1. In a large bowl, combine the dry ingredients: flour, sugar and salt
- Crust:
- 1 1/2 cups all-purpose flour
- 1 1/2 tablespoons white granulated sugar
- 1/2 teaspoon fine-grain sea salt
- 1 stick unsalted butter, frozen
- 1 large egg
- 1/4 cups buttermilk, shaken, plus 1 tablespoon-2 tablespoons, divided
- Filling:
- 1/4 cup hazelnuts (about 15-16 hazelnuts)
- 4-5 apricots, sliced
- 6 tablespoons white granulated sugar
- 1 1/2 tablespoons minced fresh sage (5-6 leaves)
- 1 tablespoon corn starch
- Pinch salt
- Topping:
- 1 large egg, beaten with a splash of buttermilk
- Turbinado sugar
Pineapple, Kale, Coconut Oil Smoothie

Broccoli is great for your body’s detoxification system– it’s full of vitamins C and K
- 2 cups kale
- 1/2 cup fresh broccoli florets
- 2 cups frozen mango
- 2 cups fresh cut pineapple
- 2 bananas
- 1 cup strawberries
- 1/2 avocado
- 2 cups water
- 2 Tbsp coconut oil
- squeeze of lime juice
Roasted Corn Chowder

Place 1/2 corn plus both cobs into a medium pot with the stock and simmer for 40 minutes
- garnishes:
- 2 ears corn, roasted and kernels removed from cob
- 1 qt plus 1 cup chicken stock
- 4 rashers bacon, diced
- 1 tablespoon extra virgin olive oil
- 1 medium yellow onion, diced
- 2 garlic cloves, minced
- 2 roasted poblanos, diced
- 1 1/2 roasted red bell peppers, diced
- 1 rib of celery, diced
- 6 baby new potatoes, diced
- 1/4 cup all purpose flour
- 3 tablespoons tequila (anejo)
- 1/2 bunch cilantro, minced
- 1 tablespoon oregano, minced
- 1/2 lime, juiced
- 1/3 cup heavy cream
- 2 tablespoons cotija cheese, crumbled
- lime wedges
- crumbled bacon
Cafe au Lait Green Smoothie

Combine the ingredients in this order: coffee, vanilla, spinach, ice, bananas
- Mocha version:
- 1 C coffee, chilled if possible (if hot, like mine was, compensate with some extra ice cubes!)
- 2 large handfuls baby spinach (this may not be as Starbucks-tasting with other greens)
- 3-4 ice cubes (I used more once I realized how warm mine was going to be, made with hot coffee)
- 1 really ripe banana, frozen
- 1 t vanilla extract
- 1/3 C milk
- Omit vanilla, reduce milk to 1/4 cup and add 1 T cocoa powder.
Pizza Hummus

Place sun dried tomatoes and oil into the bowl of a food processor
- 1 (8.5-oz.) jar sun dried tomatoes in oil
- 1 (15-oz.) can chickpeas, rinsed and drained
- 2 Tablespoons marinara sauce
- Olive oil
- 1 tsp. Italian seasoning
- Salt and black pepper
- Additional olive oil (optional)
Chicken with Tarragon and Quick-Roasted Garlic

- 3 large unpeeled garlic cloves
- 4 small skinless boneless chicken breast halves or cutlets
- 2 tablespoons (1/4 stick) butter

- 6-8 Bone-In Chicken Thighs
- 1 Cup Soy Sauce
- 1/2 Cup Lime Juice
- 2 Tbs Worcestershire Sauce
- 4 Garlic Cloves, Minced
- 1 tsp Dry Mustard
- 1 tsp Ground Pepper
- 2 Tbs Cornstarch
Sweet Potato and Rosemary Biscuits

1. Preheat oven to 400°F
- 1 1/4 cup all purpose flour
- 1 tablespoon granulated sugar
- 2 teaspoons baking powder
- 1 1/2 teaspoons salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon black pepper
- 1 stick (1/2cup) unsalted butter
- 1 small sweet potato, peeled, boiled and mashed (about 3/4 to 1 cup)
- 1 1/2 tablespoons fresh rosemary, minced
- 2 to 3 tablespoons buttermilk
Chocolate Chip, Bacon and Orange Kissed Pancakes

1. Preheat a griddle over medium to medium-high heat
- 1 cup all purpose flour
- 1 1/2 tablespoons light brown sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 cup butter, melted and cooled
- 3 to 5 tablespoons buttermilk
- 1 egg
- 2 egg whites, optional
- 2 tablespoons superfine sugar (granulated is fine), optional
- 6 to 8 slices bacon, cooked and crumbled
- 2/3 cup milk chocolate chips
- 1 large orange, zested
