Oat Tortillas

Add water slowly to oats and salt, mixing with a fork or your hands until a dough is formed
- 2 1/4 c Oat Flour
- 1 t. salt
- 1/4 - 1/2 t. onion powder and garlic powder . . . to taste
- 1 C cold water
Easy Eggplant Parmesan

Arrange a layer of eggplant slices in a colander
- 1 large eggplant, peeled and cut into 1/3 inch slices
- 2 eggs beaten
- 1 1/2 C seasoned dry bread crumbs
- 1/4 C olive oil
- 3 C spaghetti sauce
- 1/2 lb. shredded mozzarella cheese
- 1/3 C grated parmesan cheese

- 2/3 C. Shortening
- 2 T. Butter
- 5 T. Cold Water
- 1 t. vinegar

Buffalo Chicken Bites

Make the pretzel dough according to the recipe
- 1 1/2 cups cooked, finely diced chicken
- 8 ounces cream cheese, light or regular, softened to room temperature
- 1/4 cup blue cheese crumbles
- 1/4 cup shredded sharp cheddar cheese
- 2 tablespoons hot sauce (more or less to taste)
Onion & Pepper Relish - Georgia Style

Chop all vegetables - Food Processor Mix everything together, except the pectin, in a large pot
- 5 - 14.5 oz. cans petite diced tomatoes
- 6 bell peppers
- 6 C. Sugar
- 2 T. Salt
- 2 t crushed red pepper flakes
- 6 Jalapeño Peppers with seeds and ribs removed
- 3 vidalia sweet onions
- 2 cups white vinegar
- 2 small boxes powdered pectin
Grilled Vegetable Couscous with Lemon and Goat Cheese

Preheat grill to medium-high heat
- For the Vegetables:
- 3 cups sliced zucchini
- 1 lb. asparagus, trimmed
- 1 small red onion, cut into 1/2-inch thick slices
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 1 red bell pepper
- For the Couscous:
- 1 cup of uncooked couscous
- 1 tablespoon minced lemon zest
- For the Dressing:
- 3 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- 2 cups halved cherry or grape tomatoes
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped scallions
- 3 oz. goat cheese, crumbled
Baked Brie en Croûte with Apple Compote

In a 2-quart sauté pan over medium heat, melt the butter
- 1 tablespoon unsalted butter
- 2 Golden Delicious apples, peeled, cored and cut into 1/2-inch dice
- 1/4 cup sugar
- 1/8 teaspoon ground cardamom
- 1 round Brie cheese, 6 to 8 oz. and about 4 1/2 inches wide, slightly chilled
- 10-inch round of puff pastry dough, rolled out to 1/4-inch thickness
- 1 egg, beaten with 1 tablespoon water
- Crackers, baguette for serving

- 3 tablespoons pine nuts
- 4 to 5 pounds broccoli
- 4 garlic cloves, peeled and thinly sliced
- 6 1/2 tablespoons olive oil, divided
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 teaspoons grated lemon zest
- 2 tablespoons freshly squeezed lemon juice
- 1/3 cup freshly grated Parmesan cheese
- 2 tablespoons julienned fresh basil leaves (about 12 leaves)
