Cover chick peas with cold water, overnight
- 2 cups dried chick peas
- 1/3 * 1/3 cup vegetable oil
- 1 * 1 onion, finely chopped
- 1 * 1 small stick cinnamon
- 200 * 200 g eggplant, cut into 2 cm cubes
- 3 * 3 medium carrots, cut in 5 mm rounds
- 3 * 3 medium new potatoes, cut into 1 cm cubes
- 150 * 150 g pumpkin, cut into 1 cm cubes
- 1/4 * 1/4 teaspoons allspice
- 3 * 3 teaspoons harissa, or to taste
- * cups boiling water
- 100 * 100 g small stringless beans, cut in 5 cm diagonal slices
- 2 * 2 zucchini, unpleed, cut in 1 cm rounds
- 1 * 1 medium, ripe tomato, cut into eight pieces
- 1 * 1 tablespoon chopped flat-leaved parsley
- 1 * 1 tablespoon chopped fresh coriander ground pepper

- 1 * 1 cup couscous
- 3/4 * 3/4 cup boiling water
- 2 * 2 teaspoons butter

- 1.5-2 kg chicken pieces (I used drumsticks and thighs)
- 3 tsp cayenne pepper
- 6 tsp ground black pepper
- 4.5 Tbsp paprika
- 4.5 Tbsp ground ginger
- 3 Tbsp turmeric
- 6 Tbsp ground cinnamon
- 6 Tbsp olive oil
- 6 Tbsp argan oil (I used sunflower)
- 6 large onions, finely diced
- 9 cloves garlic, minced
- 1 litre tomato juice
- 4 x400g tinned chopped tomatoes
- 300 g dried apricots, halved
- 150 g raisins or sultanas
- 1 preserved lemon, chopped
- 200 g blanched flaked almonds
- 2 tsp strands Saffron, soaked in cold water
- 1.5 litre chicken stock
- 3 Tbsp clear honey

Butter shortening pie crust
- Ingredients for one double-crust 9 inch or 10 inch pie:
- Combination Butter and Shortening Crust
- 2 1/2 cups all purpose flour
- 1 teaspoon salt
- 2 Tablespoons sugar
- 3/4 cup (a stick and a half) unsalted butter, chilled, cut into 1/4 inch cubes
- 1/2 cup of all-vegetable shortening (8 Tbsp)
- 6-8 Tablespoons ice water
Gluten Free Bread

Gluten free bread for the bread machine
- Pour the liquid ingredients into the bread machine pan:
- 1 cup sorghum flour
- 1 cup potato starch (not potato flour!)
- 1/2 cup millet flour
- 2 teaspoons xanthan gum
- 1 / 1/4 teaspoons fine sea salt
- 1 tablespoon rapid dry yeast
- You'll need sesame seeds for the top; set aside for later. Or omit.
- 1 1/4 to 1 1/3 cup warm water (at 110 to 115 degrees F)
- 3-4 tablespoons extra virgin olive oil
- 2 tablespoons honey- or raw agave nectar to keep it vegan
- 1/2 teaspoon mild rice or white wine cider vinegar (or lemon juice)
- 1 tablespoon Ener-G Egg Replacer whisked with 4 tablespoons warm water till frothy
Beef Wellington

Beef fillet baked in pastry
- Marinade:
- Filet: 1 whole tenderloin of beef with outer membrane and fat removed. Tie the loin into an even cylinder at one inch intervals
- 1/3 cup light olive oil
- 1/2 cup each sliced onions, carrots and celery
- 1/4 tsp each sage and thyme
- 1 bay leaf
- 3 allspice berries or cloves
- 6 peppercorns
- 1 t salt
- 1 cup dry white vermouth
- 1/3 cup cognac
- 1 T cooking oil
- Mushroom Flavoring:
- 2 lbs. mushrooms
- 2 T butter
- 4 T minced shallots or scallions
- 1/2 c dry Madeira
- salt and pepper
- 4 to 5 T mousse de fois or fois gras
- Pastry:
- 3 c all purpose four
- 1 3/4 sticks chilled butter
- 2 t salt
- 3/4 c iced water
Pumpkin Bread Pudding

Butter an 11x7-inch baking dish
- •8 ounces French bread, torn into small pieces, about 5 cups
- •2 cups half-and-half, or half milk and half cream
- •3 large eggs
- •2/3 cup granulated sugar
- •2/3 cup brown sugar
- •1 can (15 ounces) pumpkin puree
- •1 cup dried cranberries
- •3 tablespoons melted butter
- •1 teaspoon ground cinnamon
- •1/2 teaspoon ground nutmeg
- •1/2 teaspoon ground ginger
- •1 teaspoon vanilla
- •cinnamon sugar, optional

Preparation: Put the almonds in a bowl of hot water (enough to cover them) and set aside for 10 minutes
- Ingredients:
- For the meat: 1kg lamb/ chicken cut into 2" pieces (if using chicken, use breast or thigh fillet)
- 4 large onions sliced thin
- 2 tsps garlic paste
- 2 tsps ginger paste
- 1/2 cup almonds
- 6 tbsps ghee/ vegetable/ canola/ sunflower cooking oil
- 1 " stick of cinnamon
- 5 cloves
- 3 pods cardamom
- 8 peppercorns
- 2 tsps coriander powder
- 1 1/2 tsps cumin powder
- 1 tsp garam masala
- 3 bay leaves
- 1/4 tsp caraway seeds
- mace
- 1 cup yoghurt
- Juice of 1 lime
- 1 cup chicken/ beef stock
- 2 tbsps finely chopped coriander leaves
- 2 tbsps finely chopped mint leaves
- Salt to taste
- For the rice: 2 cups Basmati rice
- saffron
- 3-4 t ghee

- Hot water
- Salt to taste
- 3 drops orange food coloring (optional)
