SCALLOPED POTATO GRATIN

Preheat the oven to 375 degrees F
- • 1 1/2 cups heavy cream
- • 1 sprig fresh thyme
- • 2 garlic cloves, chopped
- • 1/2 teaspoon ground nutmeg
- • Butter
- • 2 pounds russet potatoes, peeled and cut into 1/8-inch thick slices
- • Salt and freshly ground black pepper
- • 1/2 cup grated Parmesan, plus more for broiling
CHICKEN PARMESAN

Coat a saute pan with olive oil and place over medium heat
- • 1/4 cup extra-virgin olive oil, plus 3 tablespoons
- • 1 medium onion, chopped
- • 2 garlic cloves, minced
- • 2 bay leaves
- • 1/2 cup kalamata olives, pitted
- • 1/2 bunch fresh basil leaves
- • 2 (28-ounce) cans whole peeled tomatoes, drained and hand-crushed
- • Pinch sugar
- • Kosher salt and freshly ground black pepper
- • 4 skinless, boneless, chicken breasts (about 11/2 pounds)
- • 1/2 cup all-purpose flour
- • 2 large eggs, lightly beaten
- • 1 tablespoon water
- • 1 cup dried bread crumbs
- • 1 (8-ounce) ball fresh buffalo mozzarella, water drained
- • Freshly grated Parmesan
- • 1 pound spaghetti pasta, cooked al dente
ASIAN CHICKEN GENERAL TSO’S

Line a sheet tray with a wire cooling rack
- • Vegetable oil, for frying
- • 8 boneless skinless chicken thighs
- • 2 eggs
- 2 teaspoons cayenne pepper
- Salt and freshly ground black pepper
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- • 1 orange, zested
- • 1 1/2 cups orange juice
- • 1/3 cup dark brown sugar
- • 6 tablespoons butter
- • 2 teaspoons hot pepper flakes 1 1/2 tablespoons Worcestershire sauce Stormy Rice, recipe follows
- • In a large heavy-bottomed pot, pour in enough oil to fill the pot about a third of the way. Heat over medium heat until a deep-frying thermometer inserted into the oil reaches 350 degrees F
SECOND DAY TURKEY AND STRING BEAN POT PIES

Preheat oven to 350 degrees F
- • 4 servings or 4 cups Leftover Green Bean Casserole (recommended: Campbell's Soup recipe)
- • 1/2 cup milk
- • 1/2 cup turkey, beef, or chicken stock
- • 1 cup roasted turkey meat, chopped
- • 2 standard puff pastry sheets
BBQ GLAZED CORN

Peel corn down to the end but do not remove the husk from the cob
- • 4 ears corn, not husked
- • 1/4 teaspoon freshly ground black pepper
- • 1/4 teaspoon paprika
- • 1/4 teaspoon cayenne pepper
- • 2 garlic cloves, chopped
- • 1/8 teaspoon crushed red pepper
- • 1 tablespoon brown sugar
- • 2 tablespoons honey
SAUSAGE CUPS

Preheat oven to 350° F. Crumble sausage into medium skillet
- INGREDIENTS
- • 1 pound Bob Evans Original Sausage Roll
- • 1 package Won Ton Wrappers
- • 1 cup Monterey Jack Cheese, shredded
- • 1 cup Cheddar Cheese, shredded
- • 1/2 cup Ranch Dressing
Louisville Wings

1) Cut whole wings into pieces
- 4 lbs chicken wings
- 2 tbsp lemon pepper
- 2 tbsp sweet paprika
- Coarse salt (kosher or sea)
- 10 tbsp (1 1/4 sticks) salted butter
- 5 cloves garlic, finely chopped
- 2/3 cup dijon mustard
- 2/3 cup Tabasco sauce or your favorite hot sauce (I increased this to 1 cup)
- 2/3 cup fresh lemon juice
- 2/3 cup bourbon
- 3 tbsp brown sugar
- 1 tsp freshly ground black pepper
SMOKED CHILE SCALLOPED SWEET POTATOES

Preheat oven to 375 degrees F
- • 2 cups heavy cream
- • 1 heaping tablespoon chipotle pepper puree
- • 3 medium sweet potatoes, peeled and thinly sliced 1/8-inch thick
- • Salt and freshly ground black pepper
OAK TOWN GARLIC VINEGAR CHICKEN

In large saute pan over medium heat add 2 tablespoons oil, onions, chiles and saute for 3 minutes until translucent
- • 6 tablespoons olive oil, divided
- • 2 medium yellow onions, julienned
- • 2 Anaheim chiles, cleaned and julienned
- • 6 boneless, skinless chicken thighs
- • 3/4 cup minced garlic, divided
- • 8 ounces beer
- • 8 ounces chicken stock
- • 2 tablespoons all-purpose flour
- • Salt and freshly ground black pepper
- • 1 teaspoon dried oregano
- • 1 teaspoon paprika
- • 1/2 teaspoon chili powder
- • 1/2 cup red wine vinegar
- • 3 tablespoons green onions, sliced
PHILLY CHEESESTEAK

Combine the mustard and balsamic vinegar in a small bowl
- Marinade/Dressing:
- • 1/4 cup Dijon mustard
- • 1/2 cup balsamic vinegar
- • 2 cloves garlic, chopped
- • 1/4 cup extra-virgin olive oil
- • Salt and freshly ground black pepper
- "Philly Cheesesteak":
- • 1 (2 pound) flank steak
- • 1 red bell pepper, halved and seeded
- • 1 red onion, cut into 1/4-inch slices
- • BBQ sauce
- • 1 loaf French bread
- • 1 pound fresh mozzarella cheese, sliced
