Chicken, Avocado, and Grapefruit Salad

Pampered Chef Recipe
- Chicken:
- 1 lb boneless chicken breast
- 1 tbsp Citrus & Basil Rub
- 1 tsp olive oil
- Dressing & Salad
- 1 large ruby red grapefruit
- 1 Tbsp orange marmalade
- 3 Tbsp Olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 firm ripe avocado
- 7 C baby spinach
- 4 radishes thinly sliced
- 1/2 C red onion AND/OR sweet caramel cashews
Peanut Butter Shortbread

Combine flour and sugar in bowl
- 1 1/4 C flour
- 3 Tbsp brown sugar
- 1/3 C real butter
- 1/2 tsp vanilla
- 1/2 C mini semi chips
- 2 oz semisweet chips
- 1 tsp shortening
Peanut Blossoms

Beat all well. Blend in dry ingredients gradually
- 1 1/3 C flour
- 1 tsp soda
- 1/2 tsp sald
- Mix above
- Cream
- 1/2 C shortening
- 1/2 C peanut butter
- Gradually add 1/2 C sugar
- 1/2 C brown sugar.
- Add
- 1 egg
- 2 tbsp milk
- 1 tsp vanilla
Taco Ring

Brown hamburger and add seasoning Stir in cheddar chz Arrange crescents in circle
- cheddar cheese
- 2 pkg crescent rolls
- 1 lb hamburger
- 1 pgk taco seasoning
Spicy Chicken Sandwich

1. Bake dinner rolls as directed on package
- 8 frozen crusty French dinner rolls
- 4 boneless skinless chicken breasts
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 4 slices (1 oz each) Havarti or Monterey Jack cheese
- 1/2 cup peach preserves
- 1/4 teaspoon crushed red pepper flakes
- Lettuce leaves, if desired
Almond butter chicken casserole

Cut Chicken into cubes, and marinate in other ingredients
- For the marinade:
- 1 lb boneless skinless chicken thighs
- 2 lemons, juiced
- nutmeg, dry mustard, pepper
- Almond butter OR hazelnut sauce
- 1 cup Hazelnut butter OR almond butter
- 1 cup coconut milk
- 1 lemon, juiced
- 1/2 Tbsp nutmeg
- 1 tsp dry mustard
- 1/8 tsp anise
- 1/8 smoked paprika
- dash of hot pepper flakes (not too much, you don't want it to be spicy)
- salt and pepper to taste
- Everything else:
- 1 Tbsp of fat
- 10 oz sliced crimini mushrooms
Chicken Sandwich Ring

Heat oven to 350°F. Spray large cookie sheet with cooking spray or grease with shortening
- 2 cans (11 oz each) Pillsbury® refrigerated crusty French loaf
- 1 egg white
- 1 teaspoon water
- 2 teaspoons Progresso® Italian style bread crumbs
- 1/2 lb thinly sliced cooked chicken (from deli)
- 1/2 lb thinly sliced cooked ham (from deli)
- 2 medium plum (Roma) tomatoes, thinly sliced
- 6 square slices (3/4 oz each) process Swiss cheese, cut in half diagonally
- 6 leaves leaf lettuce
- 2 tablespoons mayonnaise
Snowball Angel Food Cake

1.Tear Angel Food cake up into small chunks and put in large bowl
- •1 Angel Food Cake
- 8 oz. Cream Cheese–softened
- 3 cups Powdered Sugar
- 8 oz. Cool Whip
- 1 can of Pie Filling
- You will need a 9 X 13 pan. I use the Glad bake-and-take kind.

- 1/2 cup grated Parmesan cheese
- 4 oz. thinly sliced cooked deli ham
- 6 oz. thinly sliced cooked deli chicken
- 1 (6-oz.) jar Green Giant® Sliced Mushrooms, drained
- 1 large green bell pepper, thinly sliced
- 4 oz. (1 cup) shredded mozzarella cheese
- 6 oz. (1 1/2 cups) shredded Swiss cheese
- 1/4 cup purchased honey-Dijon salad dressing
