Reuben Macaroni Salad

In a medium pot of boiling water, cook macaroni until tender; drain and cool
- 2 cups bowtie macaroni
- 1/2 pound cooked corned beef, diced
- 1 cup (4 ounces) shredded Swiss cheese
- 1 (16-ounce) can sauerkraut, drained
- 1/2 teaspoon caraway seed
- 1 cup bottled Russian dressing
Chicken Cordon Bleu

Preheat the oven to 350 degrees F
- 1 lb chicken cutlets (I had 5)
- 1/4 cup flour
- 1 egg, whisked
- 1 cup panko breadcrumbs
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/4 tsp dried thyme
- 1/4 tsp salt
- salt and pepper
- 2 about 2 tbsp olive oil, for drizzling
- 1/3 lb thinly sliced black forest ham
- 1/3 lb thinly sliced Swiss or Gruyere cheese (or you can do grated cheese instead)
Creamy Strawberry Fluff with Fresh Strawberry Sauce

Sprinkle 2 tablespoons chocolate cookie crumbs each into the bottom of six wide mouth half-pint jars
- 3/4 c. finely crushed chocolate cookie crumbs (from chocolate sandwich cookies)
- 1-1/2 lbs. fresh strawberries, stems removed and hulled
- 1 T. super fine sugar
- 1 T. honey
- 1-1/2 T. freshly squeezed lemon juice
- 2 tsp. lemon zest
- 1 c. heavy whipping cream
- 8 oz. PHILADELPHIA cream cheese
- 1 c. prepared or homemade marshmallow cream
- fresh strawberries for garnish

French Dip Sandwiches

1 Heat oven to 500°F. Heat 12-inch skillet over high heat
- 1 medium sweet onion, thinly sliced
- Cooking spray
- 2 teaspoons salt-free onion-herb blend
- 1/2 cup plus 2 tablespoons water
- 1 cup reduced-sodium beef broth
- 8 oz thinly sliced cooked reduced-sodium roast beef (from deli)
- 4 hoagie buns (2.5 oz each), split
- 4 slices (3/4 oz each) reduced-fat Swiss cheese, cut in half

- 1 pound sausage
- 1/4 cup all-purpose flour

- 2 cups uncooked egg noodles
- 1/2 pound lean ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 cup sliced pepperoni sausage
- 16 ounces pizza sauce
- 4 tablespoons milk
- 1 cup shredded mozzarella cheese
French Onion Soup

Melt butter in a stock pot
- 1/2 c butter
- 4 medium-sized sweet onions, sliced thin
- 2 cloves garlic minced
- 2 sprigs fresh thyme
- 1 bay leaf
- 1/2 tsp Kosher salt
- ground black pepper, to taste
- 3 10.5 oz cans Beef Consomme
- 1 10.5 oz can Beef Broth
- 1 T red wine vinegar
- 4 thick slices French Bread (or 2 c Parmesan croutons)
- 4 slices provolone cheese
- 4 slices Swiss cheese, chopped
- Parmesan cheese to taste

Preheat oven to 375°F. Spread pecans along the bottom of the pie shell
- 1 9-inch pie shell, frozen or chilled for an hour if freshly made. (See pie crust recipes.)
