Baked Shrimp in Lemony Garlic Sauce

- These quantities are for 4 servings.

- 1/4 cup fresh lemon juice
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 teaspoon Worcestershire sauce
- 3/4 teaspoon lemon-pepper seasoning
- 1/4 teaspoon ground red pepper
- 2 tablespoons chopped fresh parsley
Easy Chicken-Mushroom Quesadillas

- 1 tablespoon canola oil
- 1 large onion, chopped (about 2 cups)
- 8 ounces white button mushrooms, (about 3 cups)
- 3 cloves garlic, minced
- 2 cups cooked chopped skinless, boneless chicken breast (1 breast half)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon dried oregano
- 2 cups baby spinach leaves, sliced into ribbons
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 4 (10-inch) whole-grain flour tortillas
- 1 cup shredded Mexican cheese mix or Cheddar
- 1/2 cup salsa
- 1/4 cup reduced-fat sour cream
Asparagus and Cheddar Quiche

- 1 (11-inch) store-bought pie dough
- 3 tablespoons butter
- 1 small onion, finely chopped
- 1 bunch asparagus, chopped into 1/2-inch pieces
- Pinch cayenne
- 1 tablespoon minced garlic
- 1/4 cup chopped chives
- 2 tablespoons Dijon mustard
- 4 eggs
- 1 cup heavy cream
- 1 teaspoon grated nutmeg
- 1 tablespoon salt
- 1 tablespoon cracked black pepper
- 1 1/2 cups shredded white Cheddar
Chicken Broccoli Curry Casserole

Preheat oven to 375. Spray a small glass casserole dish (square size is good for this) with non-stick spray
- 4 large boneless, skinless chicken breasts
- chicken stock (enough to cook chicken breasts)
- 1 tsp. each poultry seasoning, thyme and ground sage
- 3 about 3 cups fresh broccoli flowerets
- 2/3 cup homemade chicken stock
- (or use a can and cook until reduced to 2/3 cup)
- 1 can Campbells Cream of Chicken Soup (not low fat or sodium)
- 1 cup mayo or light mayo, don't use fat free)
- 1-2 T lemon juice
- 2-4 tsp. sweet curry powder (I use Penzeys)
- 1/2 - 1 tsp. hot curry powder (again, Penzeys)
- (On all these seasonings I probably use the larger amount,
- but I like strong flavors)
- Coarse ground black pepper.
- 1/2 about 1/2 cup grated sharp cheddar, optional

Preheat oven to 400 degrees F and treat a glass baking dish with cooking spray
- 1 4-6 ounce chicken breast, pounded thin (use a meat mallet or the bottom of a wine bottle)
- 1/4 teaspoon olive oil
- 1/4 teaspoon minced garlic
- 1/4 cup thawed and drained frozen spinach
- 1 roasted red pepper (from a jar), sliced into thin strips
- 1/4 cup shredded part-skim mozzarella cheese

In a bowl, combine the soy sauce, sherry or broth, mustard, ginger, thyme and garlic; mix well
- CURRANT SAUCE:
- 1 cup soy sauce
- 1 cup dry sherry or Progresso ® Chicken Broth
- 2 tablespoons ground mustard
- 2 teaspoons ground ginger
- 2 teaspoons dried thyme
- 4 garlic cloves, minced
- 1 boneless rolled pork loin roast (4 to 5 pounds)
- 1 jar (12 ounces) red currant jelly
- 2 tablespoons dry sherry or Progresso ® Chicken Broth
- 1 tablespoon soy sauce
Crockpot Beef with Tomato, Pearl Onions, and Mushroom

In a large pot, brown your meat on all sides
- 1 large cut of beef (any boneless cut that’s big enough to feed your family)
- 1 bag frozen pearl onions
- a big pinch each of dried oregano, basil and parsley
- a small pinch of red pepper flakes
- 2 containers of chopped tomatoes (I used 2 17.5 oz boxes of Pomi Chopped Tomatoes)
- 1/3 -1/2 about 1/3 -1/2 cup of Worcestershire Sauce
- 1 pint sliced baby portobello mushrooms
- salt and pepper to taste
Southwest Chicken Salad With Chipotle Ranch Dressing
