Vanishing Oatmeal Cookies

from Quaker Oats
- 1/2 cup (1 stick) plus 6 tablespoons butter, softened
- 3/4 cup firmly packed brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 1-1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt (optional)
- 3 cups Quaker® Oats (quick or old fashioned, uncooked)
- 1 cup raisins or craisins (optional)
Blueberry Cornmeal Pancakes with Orange Maple Butter

Pancakes: 1. Whisk together flour, cornmeal, 2 tablespoons sugar, the baking powder, salt and baking soda
- Pancakes:
- 1 c flour
- 1/2 c cornmeal
- 1/4 c sugar
- 1 1/4 t baking powder
- 1 t coarse salt
- 1/2 t baking soda
- 1 1/2 c low-fat buttermilk
- 1/4 c whole milk
- 3 T unsalted butter, melted & cooled
- 1 large egg, lightly beaten
- 2 c fresh blueberries
- Orange Maple Butter:
- 1 stick unsalted butter, softened
- 1 T fresh orange juice
- 1 T pure maple syrup
- 1 t finely grated orange zest
- 1/4 t coarse salt
Peanut Butter Cookies

Beat together butter, peanut butter & sugars
- 1 c butter
- 1 c peanut butter
- 1/2 c sugar
- 1 c brown sugar
- 2 eggs
- 1 t vanilla
- 2 1/4 c ground oats + more if needed
- 2 t baking soda
- 1/4 t salt
- 1 1/2 **1 1/2 c Quaker Oats make aout 1 c ground oats
Caramel Crunch

Combine popcorn, cereal & almonds
- 9 c popped popcorn
- 9 c Crispix cereal
- 1 c slivered almonds
- 1 c butter
- 1/2 c light corn syrup
- 2 c brown sugar
- 1/2 t baking soda
Creamy Tomato Soup (Panera Copy Cat)

In a heavy bottomed pot (or dutch oven), heat olive oil over medium-high heat
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1 large yellow onion, sliced
- 2 (28 oz) cans San Marzano peeled tomatoes
- 1 cup chicken stock (or vegetable stock)
- 2 tablespoons sugar
- 1/4 cup half and half
- 8 large fresh basil leaves, roughly chopped
- 1/4 teaspoon dried oregano
- kosher salt and freshly ground black pepper, to taste

- 2 1/4 c all-purpose flour
- 1 t baking soda
- 1 t salt
- 1 c (2 sticks) butter , softened
- 3/4 c granulated sugar
- 3/4 c packed brown sugar

- 2 large eggs
- 1 c semi-sweet chocolate chips

Balsamic Glazed Pork Loin (slow cooker)

In a small bowl, combine the sage, salt, pepper and garlic

- 2 pound boneless pork loin roast, trimmed of large fat pockets
- 1 teaspoon ground sage
- 1/2 teaspoon salt
- 1/2 teaspoon pepper

- 1/2 cup water
- Glaze:
- 1/2 cup brown sugar, light or dark
- 1 tablespoon cornstarch
