Potato & Sausage Quesadillas

IN 10 inch skillet, cook sausage over medium-high heat about 5 minutes, stirring frequently, until brown, drain
- 1/2 bulk Italian Sausage castings removed, chopped
- 1 cup hot Milk
- 1 cup instant mashed potatoes (can use real, but adjust recipes milk and butter ingredients)
- 2 tbsp finely chopped Onion
- 1 tbsp Butter or Margarine, melted
- 1 tbsp finely chopped fresh Parsley
- 1 teas finely chopped Garlic
- 1/4 teas Salt
- 1 tbsp Vegetable Oil
- 10 (6 in) Corn or Flour Tortillas, warmed
- 10 slices of Mozzarella Cheese
Best Green Bean Casserole Ever

Preheat the oven to 475 degrees F
- For the topping:
- 2 medium onions, thinly sliced
- 1/4 cup all-purpose flour
- 2 tablespoons panko bread crumbs
- 1 teaspoon kosher salt
- Nonstick cooking spray
- For beans and sauce:
- 2 tablespoons plus 1 teaspoon kosher salt, divided
- 1 pound fresh green beans, rinsed, trimmed and halved
- 2 tablespoons unsalted butter
- 1/2 teaspoon freshly ground black pepper
- 2 cloves garlic, minced
- 1/4 teaspoon freshly ground nutmeg
- 2 tablespoons all-purpose flour
- 1 cup chicken broth
- 1 cup half-and-half

Gnocchi Minestrone Soup

- 1 lb. cooked cubed chicken
- 3/4 tsp. dried oregano
- 1/4 tsp. salt
- 1/4 tsp pepper
- 2 Tbsp olive oil
- 1 each small green, sweet red and yellow peppers, chopped
- 1 medium zucchini
- 1/3 cup chopped onion
- 1/3 cup ham
- 4 garlic gloves
- 2 cans (14 oz each) chicken broth

- 3/4 cup canned white kidney or cannellini beans rinsed

- 1/2 teas Cinnamon

- 1 1/2 tbls Lemon Juice
- 1 cup Cream
- 1 1/2 lb Cottage Cheese

In a Dutch oven or large saucepan, crumble sausage and cook over medium heat until no longer pink; drain
- 1 lb Pork Sausage
- 1 lb Ground Sirloin
- 1 1/2 cups sliced celery (3/4-inch pieces)
- 8 medium fresh tomatoes (about 4 pounds), peeled and cut into sixths
- 1 can Italian diced Tomatoes
- 4 small zucchini, sliced into 1/4-inch pieces
- 2 1/2 teaspoons Italian seasoning
- 1 1/2 to 2 teaspoons salt
- 1 teaspoon sugar
- 1/2 teaspoon garlic salt
- 1/2 teaspoon pepper
- 3 cups canned whole kernel corn, drained
- 2 medium green peppers, sliced into 1-inch pieces
- 1/4 cup cornstarch
- 1/4 cup water
- Shredded part-skim mozzarella cheese
