Chicken with Mustard Mascarpone Marsala Sauce

- 1 1/2 pounds boneless skinless chicken breasts, each breast cut crosswise into 3 pieces
- Salt and freshly ground black pepper
- 2 tablespoons olive oil
- 5 tablespoons butter, divided
- 3/4 cup chopped onion
- 1 pound cremini mushrooms, sliced
- 2 tablespoons minced garlic
- 1 cup dry Marsala wine
- 1 cup (8 ounces) mascarpone cheese
- 2 tablespoons Dijon mustard
- 2 tablespoons chopped fresh Italian parsley leaves, plus whole sprigs, for garnish
- 12 ounces dried fettuccine
Butternut Squash and Leek Soup

This vibrant orange soup is a nice light starter to the Thanksgiving meal
- 4 1/2 pounds butternut squash, halved lengthwise
- 5 tablespoons unsalted butter
- 4 large leeks, white and tender green parts, coarsely chopped
- 7 fresh thyme sprigs or 1 teaspoon dried
- 5 cups chicken stock or unsalted canned broth
- 1 1/4 teaspoons salt
- 1/2 teaspoon freshly ground pepper
- 1/2 cup sour cream
- About 3 tablespoons chopped chives
- 8 slices of bacon, fried crisp and crumbled
Herb-Stuffed Red Peppers

Directions Cut tops off peppers; remove seeds
- 2 large sweet red peppers
- 1/2 pound ground beef
- 1/2 cup chopped onion
- 1 1/2 cups cooked brown rice
- 1 tablespoon dried parsley flakes
- 3/4 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon ground allspice
- 1 (8 ounce) can tomato sauce
- 1/4 cup chicken broth
- 2 teaspoons balsamic vinegar
- 1 1/2 teaspoons dried basil
- 4 tablespoons grated Parmesan or Romano cheese, divided
Crab Dip

Mix all ingredients together and chill for 2 hours

- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup cooked crab meat
- 2 Tbsp minced shallots (or green onions or red onions)
- 1/2 teaspoon dried dill or 1 1/2 teaspoon fresh dill
- 1 teaspoon grated lemon peel
- 1 teaspoon lemon juice
- 1 teaspoon of white wine vinegar or 1 1/2 teaspoons of dry white wine
- 1/2 teaspoon of Worcestershire sauce
- Salt and pepper
