Orange Chocolate Swirl Bread – Low Carb and Gluten-Free

Low carb orange quick bread, swirled with chocolate
- Orange Bread:
- Chocolate Swirl and Glaze
- 2 oz unsweetened chocolate, chopped
- 2 tbsp butter
- 2 tbsp powdered Swerve Sweetener or powdered erythritol
- 1/2 tsp vanilla extract
- 3 cups almond flour
- 1/3 cup unflavoured whey protein powder
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup butter, softened
- 1/2 cup granulated Swerve Sweetener or other erythritol
- 3 large eggs
- Zest of medium orange
- 20 drops stevia extract
- 1/4 cup orange juice
- 1/4 cup almond milk

- 1 cup grated hard cheese (such as Parmesean) - NOT the dried powdery stuff!
Breakfast Long John

Preheat GT Xpress oven adding 1/2 tsp coconut oil to the side using
- 2 tablespoons Parmesan cheese
- 1 tablespoon almond flour -- (Honeyville is what I prefer)
- 1 teaspoon psyllium seed husk powder
- 1/4 teaspoon baking powder
- 1 egg
- 1 tablespoon buttermilk -- OR kefir, whey, yogurt, or club soda
- 1/4 cup sweetener of your choice -- or equivalent (I use 1/4 tsp EZ Sweetz Stevia and Monk Fruit)
- 1 teaspoon vanilla
- Topping
- 1 teaspoon coconut oil -- or butter
- 1/2 tbsp of your favorite powdered sweetener, such as Swerve or Truvia (I powder them in the coffee grinder)
Amazing Bread

Preheat the oven to 350 degrees F
- 3 3 3 cup blanched almond flour (10 oz)
- 10 10 to TBS psyllium husk powder (no substitutes) (90 grams) (must be a fine powder, measure weight to be sure) (I use Jay Robb whole husk psyllium ground in a blender until half its origonal volume, other psyllium may not have the same results)
- 4 4 4 tsp baking powder
- 1 1 1 tsp Celtic sea salt
- 5 5 5 TBS apple cider vinegar (2 oz)
- 6 6 6 egg whites (7 oz)
- 1 1/2 1 1/2 1/2 cup BOILING water (12 oz)

- 1/2 cup vital wheat gluten

Preheat oven to 350º. Measure all the dry ingredients into a medium mixing bowl and stir well
- 1/2 c. + 3 T. oat fiber
- 1/2 c. + 3 T. coconut flour
- 1/4 c. plain, unsweetened whey protein powder
- 1/4 c. egg white protein powder (pure powdered egg whites)
- 1 T. baking powder
- 1 1/2 tsp. glucomannan powder (or xanthan gum)
- 1/2 tsp. salt
- 1 tsp. ground nutmeg
- 1 pkt. stevia
- 1/2 c. sugar equivalent of your favorite sweetener
- 1/2 c.granular erythritol
- 3 T. melted butter, unsalted
- 3 large eggs, beaten
- 3 T. DaVinci vanilla sugar-free syrup (or 1 tsp. vanilla extract + 2 1/2 T. more water)
- 1/2 c. cream (or coconut milk)
- 1/2 c. water
- Optional: mix a bit of cinnamon with a bit of granular erythritol to sprinkle on top if desired

In a medium bowl, mix the flax meal, coconut flour, sweetener, baking powder, cinnamon, and salt
- Cinnamon Topping:
- 1/2 cup golden flax seed meal
- 1/4 cup coconut flour
- 1/4 cup granular erythritol (or equivalent sweetener)
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 3 eggs
- 1/4 cup water
- 2 tbsp mild oil (grapeseed is good)
- 1 tsp vanilla or vanilla butter nut flavoring
- 1/4 cup granulated erythritol (or equivalent sweetener)
- 2 tbsp butter, melted
- 1 tsp cinnamon
- 7 drops cinnamon oil
- Glaze:
- 1/4 cup powdered sweetener
- 2 tsp butter melted
- 2 tbsp water, or less
