Chicken Saltimbocca

Great way to dress up dreary old chicken breasts
- 1/2 cup unbleached all-purpose flour
- Ground black pepper
- 8 thin-cut, boneless, skinless chicken cutlets (about 2 pounds), trimmed of ragged edges as necessary
- 1 tablespoon minced fresh sage leaves, plus 8 large leaves (optional)
- 8 thin slices prosciutto , cut into 5- to 6-inch-long pieces to match chicken (about 3 ounces)
- 4 tablespoons olive oil
- 1 1/4 cups dry vermouth or white wine
- 2 teaspoons juice from 1 lemon
- 4 tablespoons unsalted butter , cut into 4 pieces and chilled
- 1 tablespoon minced fresh parsley leaves
- Table salt
Parmesan-Pepper Dressing

- 3 ⁄4 cup plain yogurt
- 1 ⁄4 cup mayonnaise
- 3 Tbsp. white wine vinegar
- 1 ⁄4 cup crumbled Parmesan
- 1 Tbsp. minced shallots
- 2 tsp. cracked black pepper
- 2 tsp. minced capers
- 1 tsp. prepared horseradish
- 1 ⁄2 tsp. kosher salt
Glazed Meat Loaf

1. MAKE GLAZE Whisk all ingredients in saucepan until sugar dissolves
- Glaze:
- 1 cup ketchup
- 1/4 cup packed brown sugar
- 2 1/2 tablespoons cider vinegar
- 1/2 teaspoon hot sauce
- Meatloaf:
- 2 teaspoons vegetable oil
- 1 onion, chopped fine
- 2 garlic cloves, minced
- 2/3 cup Saltine crackers, crushed (about 17 crackers)
- 1/3 cup whole milk
- 1 pound 90-percent lean ground beef
- 1 pound ground pork
- 2 large eggs plus 1 large yolk
- 2 teaspoons Dijon mustard
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon dried thyme
- 1/3 cup finely chopped fresh parsley
- Salt and pepper
Ham & Asparagus Strata

Assemble this the night before and just put it in the oven
- 4 English muffins, torn or cut into pieces
- 1 cup (6 oz. by weight) cubed, cooked ham (don't skimp on cheap stuff)
- 5 oz. cooked fresh asparagus (original recipe calls for 1/2 of a 10 oz. package of frozen asparagus or broccoli)
- 6 oz. Swiss cheese, shredded (or 6 (1 oz.) slices, torn)
- 4 eggs, beaten
- 1-3/4 cups whole milk
- 1/2 cup sour cream
- 2 tablespoons finely chopped onion
- 1 tablespoon Dijon mustard
- 1/4 teaspoon caraway seed
- 1/4 teaspoon pepper

- For the Meat:
- 1 beef brisket (5-7 lbs.), preferably with a nice fat layer of ~1/2”
- 6-8 cups wood chips or chunks (mesquite preferred), presoaked for at least an hour
- 1 large disposable foil pan, large enough to hold the brisket
- For the Rub:
- 1 tablespoon kosher salt
- 1 tablespoon chili powder
- 2 teaspoons granulated sugar
- 1 teaspoon freshly ground black pepper
