"This recipe is as comforting as a chicken or shepherd's pie, but it's made with warm Latin spices
- Pie Filling:
- 2 Tbsp vegetable oil, divided
- 2 lbs lean ground beef
- 1 large yellow onion, diced
- 1 medium green bell pepper, diced
- 1 medium red bell pepper, diced
- 3 garlic cloves, minced
- 1 tsp salt
- 3/4 tsp ground black pepper
- 2-1/2 tsp ground cumin
- 2 tsp chili powder
- 2 tsp dried cilantro
- 1-1/2 tsp oregano
- 1 (14.5-oz) can diced tomatoes (juice reserved)
- 1 (10-oz) can diced tomatoes and green chilies, (juice reserved)
- 1 (15-oz) can pinto beans, drained and rinsed
- 1 cup frozen corn kernels
- Cornbread Crust:
- 1 (8.5-oz) package corn muffin mix
- 1 egg, beaten
- 1/3 cup milk
- 6 oz Monterrey Jack cheese, shredded
30-Minute Skillet Tamale Pie

A satisfying one skillet dish containing lightly seasoned ground beef, tomatoes, black beans, spices and a fluffy c
- 1 TB coconut oil
- 1 TB clarified butter or ghee
- 1 yellow onion, diced small
- 1-1/2 TB chili powder
- 2 tsp. ground cumin
- 1 tsp. dried oregano
- Sea salt and black pepper to taste
- 2 garlic cloves, minced
- 1 pound 85/15 grass-fed organic ground beef
- 1/2 cup water
- 1 (14.5 ounce) can of diced tomatoes (don’t drain)
- 1-1/2 cup frozen or fresh organic corn
- 1 (15-ounce) can of organic, low sodium black beans
- 1 (8.5 ounce) package of organic cornbread mix **See Notes**
- 1-1/2 cup medium sharp raw cheddar cheese
- 1 TB freshly chopped cilantro (if you love cilantro, add 2 TB. I use 1 TB cilantro and 1 TB chopped parsley
- 1 can diced green chile’s (optional)

- 1 1/2 lb lean ground beef
- 1 c chopped onion (1 large)
- 1-10.75 oz can condensed tomato soup
- 1-8 oz can tomato sauce
- 3/4 c frozen whole kernel corn
- 1/2 c chopped pitted ripe olives
- 2 T chili powder
- 1/2 teas ground black pepper
- 3/4 c yellow cornmeal
- 1/2 c flour
- 1 teas baking powder
- 1/2 teas baking soda
- 1/2 teas salt
- 1 egg
- 1 c buttermilk or sour milk (1 T vinegar or lemon juice to enough milk to make cup total liquid-let this set for 5 minutes before adding to mixture
- 2 T veg oil

- 1 pound extra lean ground beef or ground turkey, I used Trader Joe’s extra lean ground beef (96/4)
- 2 cups onions, chopped
- 1 tablespoon fresh garlic, minced
- 1 (15 oz) can black beans, rinsed and drained
- 1 cup fresh or frozen corn kernels
- 1 can (14 1/2-oz) diced & fire roasted tomatoes (with green chiles) or 1 can of diced tomatoes, in juice
