Ingredients

  • 1 TB olive oil
  • 2 medium red onions
  • 1.5 tsp fresh thyme, chopped
  • 2 tsp brown sugar
  • 2 tsp balsamic vinegar
  • salt and pepper
  • 2 tortillas
  • 4.5 oz fresh mozzarella

Preparation

Step 1

Heat the olive oil in a non stick frying pan, add the onions and thyme and stir over a low heat for 15 minutes. Stir in the sugar, balsamic vinegar and seasoning and continue to cook for 5 minutes. Turn the heat up and cook for one minute until all the liquid has evaporated. Remove from the heat and leave to cool.

Heat the tortillas according to package directions. Divide the cooked onion between the two tortillas, slice the mozzarella and lay on top of the onions ans season. Roll up tortillas.
