Ingredients

  • 2 eggs
  • 3/4 cup powdered sugar
  • 1/2 cup flour
  • Whipped cream or topping
  • Strawberry or preferred preserves

Step 1

With whisk beat eggs with sugar in mixing bowl about 1 minute, or until smooth. Fold in flour and beat 1 minute longer. Drop by level measuring tablespoonfuls onto well greased floured cookie sheet, leaving plenty of space between (about 4 to a sheet).

With small spatula spread each to form a 5-1/2 cookie. Bake in preheated 400 degree oven 3 minutes, or until golden (do not overbake). Loosen immediately with long flexible spatula, turn upside down and shape each cookie into a cone. Cool seam side down.

Just before serving, fill with whipped cream and garnish with dollop of preserves. They can also be filled with softened ice cream. Makes 16.
