Easy Cabbage Roll Casserole

Ingredients
- 1 1/2 lbs. lean ground beef or turkey
- 2 medium onions, finely chopped
- 1 clove garlic, minced
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1 small can tomatoe sauce (7.5 oz)
- 1 cup water
- 1 can (10 oz) tomatoe soup
- 1/2 cup long grain rice
- 4 cups shredded cabbage
- 1/3 cup tomatoe juice or water
- Sour cream

Step 1
1. In a large nonstick skillet over medium-high heat, combine meat, onions, garlic, salt and pepper, cook, breaking up meat with a spoon, until browned. Drain off any excess fat. Return to heat and add tomatoe sauce, water and half the can of tomatoe soup, mixing well. Add rice,stirring to combine.
2. Into a prepared slow cooker, place half the meat mixture, then half the cabbage. Top with remaining meat mixture and remaining cabbage.
3. In a bowl combine remaining tomatoe soup with tomatoe juice, mixing well. Pour into slow cooker. Cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 6 hours, until bubbling and heated through. Serve with sour cream.
This dish can be assembled up to 12 hours before cooking. Follow preparation directions and refrigerate overnight in the slow cooker stoneware. The next day, place stoneware in the slow cooker and continue cooking as directed.
