Chunky Potato Soup

Ingredients
- 3 med potatoes
- 1 small onion
- 3 Tbsp butter
- 3 Tbsp flour
- crushed red pepper flakes
- ground black pepper
- 3 c milk
- 1/2 tsp sugar
- 1 c cheese
- 1 c cubed cooked ham

Step 1
1. Peel potatoes and cut into 1" pieces.
2. Bring water to a boil in a large sauce pan. Add potatoes and cook until tender. Drain, reserving 1 c cooking liquid. Set potatoes aside.
3. Finely shop onion. Melt butter in a stock pot over medium heat. Add onion and cook stirring frequently.
4. Add flour to pan; season with pepper and pepper flakes to taste.
5. Gradually add potatoes, reserved liquid, milk and sugar to onion mixture, stir well.
6. Add cheese and ham. Simmer over low heat 30 minutes, stirring frequently.
