Ingredients

  • 4 (1/2 lb) dry mushrooms
  • 5 tb butter
  • 2 onions, chopped
  • 1 3/4 cups pot barley
  • 4 cups consomme
  • 1 cup hot water

Preparation

Step 1

1) Soak dry mushrooms in 1 cup hot water for 1 hour. Reserve the water and cut mushrooms into slivers.

2) Melt 3 tb butter in frying pan, add onions and sliced mushrooms and toss over meadium heat for 5 minutes. Remove from butter and set aside.

3) Add 2 additional tb butter to the pan and 1 3/4 cups barley. Stir over meadium heat until the barley is nutty brown. Add the onions and mushrooms, stir well, season to taste and place in a casserole.

4) Pour the reserved mushroom water and 4 cups consomme over and cover. Bake in 350 degree oven for 30 minutes.

* Use 1 or 2 cans of mushrooms pieces with 1 cup of the liquid if dry mushrooms are unavailable.
