Breakfast Quiche

A crustless quiche--great for breakfast or main meal. Can be made with any type of meat (hamburger/sausage/ham) or cheeses.

Ingredients

  • 4 eggs
  • 1/2 cup swiss cheese (shredded)
  • 1/2 cup cheddar cheese (shredded)
  • 1 cup cottage cheese (small curd)
  • 1/4 teaspoon salt and pepper
  • 1 teaspoon dry mustard
  • 1 or 2 shakes of tabasco sauce
  • 8 ounces mushrooms (sliced)
  • 2 Tablespoons butter
  • 2 cups ham (diced)
  • 1 small can green chile (mild/chopped)

Step 1

Saute mushrooms in butter. Drain. Whisk eggs, salt, pepper, mustard and tabasco. Add cheeses (reserving some to sprinkle on top), mushrooms, ham and green chile and mix well. Pour into greased 9 inch pie pan. Top with grated cheese. Bake at 350 degrees for 45 minutes.
