Ingredients
- 1 cup Flour
- 1 cup White Whole Wheat Flour
- 1 tsp Baking Soda
- 1/4 tsp Salt
- 1/2 cup Butter
- 3/4 cup Brown Sugar
- 2 large Eggs, slightly beaten
- 1 tsp Vanilla
- 1/2 tsp Coconut Extract
- 2-1/3 cups over ripe Bananas, smashed
Preparation
Step 1
In a large bowl, combine flours, soda and salt.
In a separate bowl, cream the butter and brown sugar together.
Stir in the eggs, bananas and flavorings and stir until well blended.
Add the flour mixture to the banana mixture. Stir just to moisten.
Pour into a greased loaf pan. Bake at 350 for 40 to 50 minutes or until a toothpick comes out not clean, but almost clean.
Keep the bread in the pan for about 15 minutes and then turn out onto a cooling rack.
Slice and enjoy!
