Ingredients
- 2 lb new potatoes, scraped and halved if large
- 1 c. frozen peas
- 2 scallions, sliced
- Olive oil
- 7 oz sour cream
- 1 tsp wholegrain mustard
- Lemon
Preparation
Step 1
Boil the potatoes until cooked. Add peas, allow to come back to the boil, then drain. Sauté the scallions in 1 teaspoon oil for a few minutes over a medium heat until lightly browned. Blend the sour cream with a little olive oil and the wholegrain mustard. Add a little of the lemon zest and squeeze of juice, then add in the potatoes, peas and fried onions. Mix thoroughly and serve straightaway with the fish flaked on top.
