Ingredients

  • 3 Chicken breast
  • 1 onion
  • 1 C chopped spinach
  • 2 garlic cloves
  • 4 pieces cooked bacon
  • olive oil
  • coarsley ground almonds

Preparation

Step 1

1. Heat a couple of Tbsp of olive oi in saucepa and saute onions and garlic for 5 min or so. Add spinach and bacon, cook few more minutes
2. Slice chicken into thin layers and pound between seran wrap.
3. Take your thinnd chicken and place on cookie sheet. Divide spinach/onion mix over them and roll them up. Hold together with toothepicks if need.
4. Brush with olive oil and salt and pepper to taste
then roll chicke in the ground almonds.
5. Bake for 30-35 min at 350
