Ingredients
- 1/2 # zucchini, grated
- 1/2 # yellow squash, grated
- 1 med carrots, grated
- 1 medium sweet red pepper, chopped
- 1/2 bunch green onions, chopped
- 1/8 cup oil
- 1/8 cup cider vinegar
- 2 tb mayonnaise
- 1/2 tsp sugar
- 1/4 tsp salt
- pinch of celery salt
- pinch of black pepper
Preparation
Step 1
Combine zucchini, squash, red pepper, and onions. Toss lightly. Wisk remaining ingredients together. Pour over vegetables and toss lightly. Cover, chill 30 minutes before serving.
