Ingredients
- 1 large sweet potato, peeled and cut into 2 inch pieces
- 1 large tomato, chopped
- 1/2 cup water
- 1/4 cup heavy cream
- 2 Tbsp extra virgin olive oil
Preparation
Step 1
Peel a large sweet potato and cut into 2 inch pieces. Put the potato in a large saucepan and cover with water by 2 inches. Boil until tender, about 20 minutes. Drain and transfer to a blender or food processor. Add chopped tomato, water, heavy cream and extra virgin olive oil and puree until smooth. Season with salt and pepper and serve hot.
