Palm Gigi Salad

A light and refreshing salad featuring string beans, shrimp, tomatoes and onions tossed in a red vinaigrette dressing. Enjoy!

Ingredients
- DRESSING:
- 1/2 pound string beans, cleaned and cut into 1 inch pieces, cooked until crisp-tender, about 5 minutes
- 1/2 pound medium shrimp, peeled and deveined, cooked and chopped into small pieces
- 1 or 2 large beefsteak tomatoes, seeded, and chopped into 1-inch pieces (no need to peel)
- 1 sweet onion, such as Vidalia, chopped into 1/2-inch pieces
- 4 slices bacon, fried until crisp, drained, then crumbled
- 1/2 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon pepper

Step 1
Whisk salad dressing ingredients together. Taste for seasoning.
Combine string beans, shrimp, tomatoes, and onions in decorative bowl. Toss with dressing and let absorb flavors for about 1/2 hour. Just before serving, toss in bacon bits and serve.
