PEANUT BUTTER COOKIES

Ingredients
- 2 1/2 cup flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 sticks butter, softened
- 1 cup peanut butter
- 3/4 cup sugar
- 3/4 cup brown sugar
- 2 large eggs
- Sugar for rolling

Step 1
1. Whisk together the flour, soda, powder and salt. Beat the butter, peanut butter and both sugars for 2 minutes. Add eggs, beat 2 minutes. Gently blend in dry ingredients.
2. Divide in half, wrap, and chill overnight. Shape scant tablespoons of dough into balls, roll in sugar, and place 2 inches apart on lined baking sheets. Press each with fork tines.
3. Bake at 350 degrees for 12 minutes, until golden. Let rest for 2 minutes; transfer to racks to cool.
Makes 60. Per cookie: 100 calories, 11g carbs, 2g protein, 15mg cholesterol, and 5g fat.
NOTE: No need to chill, just roll in sugar and place on baking sheet. After pressing with fork tines, sprinkle with a bit more sugar. Don’t overbake…take out after 12 minutes. Can be frozen prior to baking. If frozen, bake at 325 degrees for 18 minutes.
