Gluten-Free Gingerbread Men

These gingerbread men are a classic Christmas cookie with a gluten-free twist. Happy Holidays and enjoy!

Ingredients

  • 1/2 cup white rice flour
  • 1/2 cup brown rice flour, you can use all white flour
  • 1/4 cup potato starch
  • 1/4 cup tapioca flour
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon guar gum
  • 1/2 teaspoon baking powder
  • 1 egg
  • 4 tablespoons softened butter
  • 1/2 cup dark brown sugar, packed in measuring cup
  • 1/2 cup white sugar
  • 3 tablespoons molasses
  • 3/4 teaspoons ginger, up to 1 1/4 teaspoons (depending on how much of a gingery kick you want :)
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/8 teaspoon cloves
  • 1/8 teaspoon all spice
  • 1/2 teaspoon sea salt

Preparation

Step 1

Combine flours, guar gum, xanthan gum, and salt in a large bowl. Mix.

Mix together spices in a small cup or bowl.

Cream butter and sugars together, mix in molasses and vanilla. Mix in the spices.

Combine wet ingredients with the dry.

Refrigerate dough for about an hour.

When rolling out dough after it's been refrigerated, use a little extra white rice flour for dusting. I roll the dough out about 1/4 inch thick between 2 sheets of parchment paper.

Bake cookies in a preheated 350 degree oven for 9-11 minutes. Allow cookies to cool completely before removing them from the cooking sheet.
