Ingredients

  • 1 lb. mild or hot italian sausage removed from casings
  • 2 medium onions diced
  • 3 large carrots diced
  • 6 stalks celery diced
  • 2 Tbsp. olive oil
  • 1/3 cup white wine
  • 1 can cream of chicken soup
  • 1 quart chicken broth
  • 1/2 cup orange juice
  • 3 Tbsp. lemon juice
  • 1/2 cup parsley
  • 2 +1/2 tsp kosher salt, pepper to taste
  • 6 cups toasted bread cubes sour dough bread

Preparation

Step 1

brown sausage in a large skillet. remove sausage and set aside in a large bowl.
add olive oil to skillet and saute the vegetables until carmelized. pour in white wine and reduce by half about 1 minute. pour over sausage, add soup mixture and broth, mix to combine well, toss in bread cubes and toss together to combine well. add juices, parsley, salt and pepper and toss together.
place in a large baking dish (13x9) and cover with foil. bake 45 minutes. remove from foil and broil 10 minutes until top is golden and crusty.
