Ingredients

  • 1 lb ground beef
  • 1-2 cloves garlic
  • 1 c. red wine
  • 1 lg box (9 noodles) no cook lasagna noodles
  • 2 lg jars Prego original
  • 2 lg bags shredded mozzarella
  • 1 zucchini (sliced)
  • 1 yellow squash (sliced)
  • 1 c. carrots (grated)
  • 1 egg
  • 1 lg container cottage cheese
  • 1 1/2 c shredded Parm
  • 1 Tbl dried parsley
  • pepper to taste

Preparation

Step 1

1. Brown beef in garlic & wine

2. Reserve 1/2 c. Prego. Combine remaining Prego & meat. Heat through.

3. Combine egg, cottage cheese, Parm, parsley & pepper in a mixing bowl. Set aside.

4. Place reserved Prego on bottom of a large pan (bigger than 9x13)

5. Place layer of lasagna noodles followed by meat sauce, then cottage cheese layer, then veggie layer, then mozz.

6. Repeat #5 with last layer being noodles & meats sauce.

7. Bake 350 for 75 minutes covered.

8. Uncover and bake for 15 more minutes and sprinkle Parm on top.
