My three year old is a super picky eater. He would eat cereal bars, cookies and ham sandwiches all day, every day, if I’d let him, but since that’s not an option, I decided to beat him at his own game. If it’s cookies he wants, then it’s cookies he gets… healthy(er) cookies.

Ingredients

  • 1 1/2 Cups Quick Cook Oats
  • 1/2 Cup Peanut Butter
  • 1 Cup Unsweetened Applesauce
  • 2 Bananas (mashed)
  • 1 Tbsp Pure Vanilla Extract
  • 1 Teaspoon Cinnamon
  • 2 Tbsp Honey
  • 1/2 Cup Walnuts (optional)
  • 1/2 Cup Shredded Coconut (optional)
  • 1/2 Cup Raisins (optional)

Cooking time 45mins

Preparation

Step 1

Mix all ingredients in a large mixing bowl and let it set for 30 minutes.
Roll mixture between your palms, making approximately 1 inch balls and place on a greased cookie sheet, flatten slightly with the heel of your hand.
Bake for 10-12 minutes at 350°.
That’s it. Healthy(er) cookies and you don’t even have to tell the kids they’re good for them.
