Easiest Gluten-Free Yellow Cake
Makes enough for 1 small round cake...double if you want a 2 layer cake :)

Ingredients
- 1/2 cup white rice flour
- 1/3 cup tapioca flour
- 1/3 cup potato starch
- 1 1/2 tsp xanthan gum
- 1/2 tsp salt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup vanilla yogurt, w/ the cream on top
- 1/4 cup canola or vegetable oil
- 2 eggs
- 1 tsp pure vanilla extract
- 2/3 cups sugar
- 1/2 tsp grated orange zest

This is a very easy cake to make. I just mixed the dry ingredients together in one bowl, then added in the wet ingredients, starting with the yogurt and eggs and ending with the oil.
Spray a round 9 inch cake pan with non-stick, then pour in the batter.
Bake at 350 for 20 minutes, remove and cover with foil
put back in oven and bake for another 5-7 minutes with foil.
Let the cake cool completely before you frost it.
To make the frosting, I just mixed powdered sugar and cocoa together with few tablespoons of softened butter and a few teaspoons of water. Add more sugar than unsweetened cocoa.
