Ingredients
- 1 About 1 lb cubed beef meat
- 1 lg green bell pepper, chopped
- 1 onion, roughly chopped
- 1 lg tomato, chopped
- 1/4 cup chopped garlic
- 2 tsp cumin
- Black pepper
- 1 oz water
- 1 qt beef broth
- 1/2 c. blonde roux, made from 1/2 c. flour and 1/2 c. fat
- Salt
Preparation
Step 1
Season meat with salt and pepper. In a large saute pan over medium heat add the cubed meat and cook until browned. Add to crock pot with the chopped bell pepper, onion, tomato, garlic, cumin, black pepper and 1-ounce water and stir to combine. Add enough beef broth to barely cover meat. Use water if more liquid is needed. Cook on Low until the beef is tender, 6 to 8 hours. Half way through cooking add the roux.
Season with salt, to taste. Transfer to a serving bowl or platter.
Carne guisada is a hearty Mexican-style beef stew. It is excellent with tortillas or cornbread, and is also great as a burrito filling.
