Ingredients
- Almond-Sugar Coating:
- 2/3 cup white rice flour
- 1/3 cup potato starch
- 1/3 cup tapioca flour
- 3 TBSP almond meal
- 2/3 cup sugar
- 1/2 tsp sea salt
- 1/2 tsp baking soda
- 1/2 tsp xanthan gum
- 1/4 tsp pure lemon extract
- 1 large egg
- 3 1/2 TBSP melted butter
- 1 1/2 TBSP apple sauce
- 2 TBSP milk
- 1 1/2 TBSP melted butter
- 1/4 cup almond meal
- 1/8 cup powdered sugar
- 1/4-1/2 tsp cinnamon
Preparation
Step 1
Preheat oven to 375
Combine all flours, almond meal, baking powder, sugar and salt.
In a small bowl, mix egg. Combine with melted butter, apple sauce and milk. (The apple sauce is what makes them soft :).
Use a medium sized cookie scoop to scoop cookie dough onto a baking sheet.
For almond-sugar coating:
Sombine almond meal, powdered sugar, and cinnamon in a small bowl.
Use a pastry brush to lightly coat each cookie in butter, now sprinkle with the almond-sugar coating.
Bake in a preheated oven at 375 for 15-18 minutes. Allow cookies to cook completely before eating :).
