Ingredients

  • Cake
  • 6 whole eggs
  • 1 cup sugar
  • 1 tbsp rum concentrate
  • 1 cup cake flour
  • Syrup
  • 1/4 cup dark rum or 1 tbsp rum flavoring
  • 1/3 cup water
  • 1/2 cup sugar
  • Filling
  • 6 egg yolks
  • 3 tbsp corn starch
  • 1/3 cup sugar
  • 2 cups milk
  • 1/2 cup rum concentrate
  • Garnishes
  • Whipped cream
  • Cherries
  • Sliced Almonds
  • Chocolate shavings

Preparation

Step 1

Cake
1. Preheat oven to 350 degrees F. In a 5 qt mixing bowl, whip the eggs and rum concentrate, adding the sugar, 1/3 at a time, allowing 3-4 minutes between additions until all the sugar is in. Whip until fluffy and fold into cake flour.
2. Add mixture to prepared 9" cake pans. Bake until golden brown. Cool on wire rack.

Syrup
1. Place all ingredients in a small saucepan. Heat to boiling, until all sugar is dissovled.
2. Let cool before spreading on cake.

Filling
1. In a stainless steel saucepan, whip together the eggs, cornstarch, sugar, milk and rum concentrate. Place on stove over medium heat until thick, mixing regularly. Be careful not to burn.
2. Remove from heat and let cool to room temperature.

Assembly
1. Place filling in between layers.
2. Frost with whipped cream.
3. Garnish with almonds, cherries and chocolate shavings.
