Ingredients
- 4 C self rising flour, sifted
- 1/2 C sugar
- 2 1/4 C lukewarm water
- 2/3 C melted butter
- 2 TB cornmeal
- 1 egg, beaten
- 1 TB dry yeast
Preparation
Step 1
Add the yeast to the lukewarm water and stir. Mix together beaten egg, sugar, and melted butter. Add to the yeast mixture. Add self-rising flour and cornmeal. Mix by hand with a wire whisk until well-blended. DO NOT BEAT WITH AN ELECTRIC MIXER. Spoon into greased muffin tins. Bake at 400 F for 10-15 minutes. Dough can be kept covered with foil in refrigerator- it gets better with age.
