  • 1 cup butter
  • 2 cups sugar
  • 1 large egg
  • 1 cup canned pure pumpkin
  • 1 tsp vanilla extract
  • 3 cups flour
  • 2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1 tsp salt
  • 1/4 tsp nutmeg
  • 2 cups white chocolate chips

Preparation

Step 1

Using an electric mixer, beat butter with sugar until fluffy.

Beat in egg, pure pumpkin, and vanilla extract.

Stir in flour, baking soda, cinnamon, salt, and nutmeg.

Add white chocolate chips.

Drop spoonfuls of batter 2 inches apart on a parchment-lined baking sheet and bake in a 350 F oven, rotating halfway through, until just browned on bottoms, 20 minutes. Transfer cookies to a rack to cool.
