Vanilla Icebox Cake

Ingredients
- 1 qt. heavy cream, chilled
- 1/2 c sugar
- 1 T vanilla
- 80 chocolate wafer cookies
Preparation
Step 1
Beat cream, sugar and vanilla in bowl of stand mixture fitted with whisk on medium-high speed until soft peaks form, about 2 minutes. Spread 2/3 cup into even layer on cake plate, creating 8" circle. Arrange 8 cookies on top, with edge of cookies overhanging whipped cream halfway with one cookie in the center. Repeat, ending with layer of whipped cream and 10 layers of cookies.
Loosely wrap in plastic wrap and refrigerate at least 6 hours. Sprinkle with excess cookie crumbs.
