Pillow soft vegan chocolate chip cookies

this recipe is adapted from vegan with a vengeance's chocolate chip cookies...yummmmmmmmmm. soft and creamy!

Ingredients

  • 1/2 cup earth balance marg, soft & at room temp.
  • 1/2 c + 2 T organic brown sugar.
  • 1 T molasses.
  • 1 tsp. pure vanilla.
  • 1-1/4 c. whole wheat white flour.
  • 1/2 tsp soda.
  • 1/2 tsp salt.
  • 3/4 c semisweet chocolate chips (Ghiradelli brand).
  • 2-3 T soymilk.

Preparation

Step 1

350f. cream softened e.b. with brown sugar until fluffy. add molasses and vanilla and mix in. add flour, soda, and salt and mix until a dough forms, if a dough does not form, add 2-3 T soymilk until a cookie dough forms. mix in chocolate chips and then dig your hands in. roll into 1 " balls and plop on ungreased cooky sheet. bake 8-10 mins. until slightly browned. let cool on pan a bit, then transfer to a rack if you would like. they will cool on the pan just fine. try one warm!
