Ingredients
- Chop the following:
- 1 quart cucumbers (remove seeds)
- 1 quart onions
- (1 quart = 4 cups)
- 2 bunches celery
- 3 sweet red peppers
- 2 hot peppers (if desired)
- 1 large cauliflower
- (I use a food processer to chop all of the above)
- Place in a large pot. Cover with cold water. Add 3/4 cup pickling salt. Cover with a lid and let stand overnight.
- Drain off liquid and add:
- Oringal recipe calls for 6 cups sugar (I've cut to 4-1/2 cups and works fine)
- 3 tablespoons mustard seed
- 1 tablespoon celery seed
- 1 1/4 cups vinegar
- In a cup make a paste of:
- 4 tablespoons prepared mustard
- 1 tablespoon tumeric powder
- 2/3 cup flour mixed with a little vinegar.
Preparation
Step 1
Add to the above pickle. Let come to a boil to thicken somewhat. Stir constatly.
Place in jars while hot. Seal
Makes: approx 9 500ml jars
