Ingredients
- 2 Tables. oil
- 1/2 cup coarsely chopped onion
- 4 med. zucchini, trimmed and coarsely chopped
- 1 (1 lb) can stewed tomatoes
- 1/3 teas. Italian seasoning (basil and oregano)
- 1/2 teas. salt
- 1/4 teas. coarse ground black pepper
- 1/3 cup grated parmesan cheese
Preparation
Step 1
Heat oil in wok. Add onion and zucchini. Stir fry about 1 minute. Add tomatoes, Italian seasoning, salt and pepper. Bring to a simmer/boil. Cover and steam 4-5 minutes or until zucchini is still slightly crisp. Stir in cheese and stir fry about 30 seconds.
